Strawberry Banana Loaf Ingredients
The Quick Bread Base – eggs, sugar and butter are the base for any quick bread. Followed by flour, baking powder and baking soda. Using both baking powder and soda helps create a bread with a soft fluffy texture.
Bananas and Strawberries – Use ripe bananas as they have a more intense and sweet flavor that ones that are not as ripe. And they will mash easily which is a bonus! I used frozen strawberries because they are easy to mash, but I also added a few fresh in as well for texture. You can use all frozen or fresh if you prefer, just drain the liquid a bit before adding to the batter. Try this recipe with rhubarb, blueberries or peaches too.
Rolled Oats – This is not a usual quick bread ingredient, but I like the added nutrition it brings to the recipe.
How to make Strawberry Banana Bread

- As always, preheat your oven, prepare your loaf pan with parchment paper and assemble your ingredients.
- Beat eggs, then add all wet ingredients.
- Stir together the dry ingredients in a large bowl.
- Add the wet mixture to the dry. Mix only till combined – don’t over mix!
- Bake for 40 minutes or until a toothpick, when inserted into the loaf, comes out dry.
- Allow to cool on a baking rack.
Tips for making a great quick bread
- First and foremost, do not over mix the batter! Over mixing is the main culprit for a tough consistency.
- Mash your bananas on a flat surface such as a cutting board. Most people mash in a bowl which, for me, is way more difficult. Trust me, mash them on a flat surface!
- Allow the eggs (and all your ingredients) to come to room temperature. If you are in a rush, set eggs in a bowl of warm water for a few minutes to speed the process up.
- After your bread is cooled completely, be sure to wrap in plastic wrap to keep it moist. I like to double wrap my bread in both plastic wrap and a zippered bag, then store it in the refrigerator.
- Don’t be surprised if your banana bread tastes even better the next day! So you may want to make a double batch!
- Freeze this loaf for a quick grab and go snack, or when last minute guests pop over.

- Loaf pan 9×5 inch

Ingredients
- 2 eggs
- ¾ cup sugar
- ½ cup butter melted
- ¾ cup strawberries mashed
- 1 large banana mashed
- 2 cups flour
- ½ cup rolled oats
- 1 teaspoon baking powder
- ½ teaspoon baking soda
Instructions
- Preheat oven to 350ËšF and line a 9×5 inch loaf pan with parchment paper.
- In a medium bowl beat eggs till frothy. Add sugar, butter, strawberries and bananas and combine.
- In a large bowl, combine all the dry ingredients.
