I love to make quick breads or muffins, especially ones made with bananas! My family requests Chocolate Chip Banana Nut Muffins all the time, and it is one of my favorite go-to recipes!
A close second though has to be Banana Bread! While I have tried multiple recipes, this Strawberry Banana Bread is by far my favorite version of the famous quick bread!
How to make Strawberry Banana Bread
- As always, preheat your oven, prepare your loaf pan with parchment paper and assemble your ingredients.
- Beat eggs, then add all wet ingredients.
- Stir together the dry ingredients in a large bowl.
- Add the wet mixture to the dry. Mix only till combined – don’t over mix!
- Bake for 40 minutes or until a toothpick, when inserted into the loaf, comes out dry.
- Allow to cool on a baking rack.
Tips for making a great quick bread
- First and foremost, do not over mix the batter! Over mixing is the main culprit for a gooey or chewy consistency.
- Allow the eggs (and all your ingredients) to come to room temperature. If you are in a rush, set eggs in a bowl of warm water for a few minutes to speed the process up.
- After your bread is cooled completely, be sure to wrap in plastic wrap to keep it moist. I like to double wrap my bread in both plastic wrap and a zippered bag, then store it in the refrigerator.
- Don’t be surprised if your banana bread tastes even better the next day! So you may want to make a double batch!
If you use a very ripe banana, the flavor will be more intense than a less ripe banana. So if you like a more mild flavor, use bananas that are just slightly ripe. The problem is that less ripe bananas are a bit harder to mash, so you may have more ‘chunks’ in your loaf.
A tip for mashing your bananas is to do it on a flat surface like a cutting board. Most people mash in a bowl which, for me, is way more difficult. Trust me, mash them on a flat surface!
I used frozen strawberries because they are easy to mash, but I also added a few fresh in as well for texture. You can use all frozen or fresh if you prefer.
How many servings in this Strawberry Banana Bread recipe?
In a 9×5″ loaf pan, you will get 9 – 1″ slices. I find that to be a little thick, so I would say closer to 10-12 servings depending on how thick you choose to slice it.
