This recipe is modified from a rhubarb crisp recipe my mom always made. With the addition of eggs, the filling for this custard crisp is so creamy and delicious paired with that extra tart rhubarb!
Ingredients for Rhubarb Custard Crisp
You just cant beat the sweet and tart flavors and textures found in a fruit crisp!
- The Fruit Base – Obviously rhubarb is the star of this recipe. But feel free to add other fruits like strawberries, apples, raspberries, saskatoons or blueberries. Eggs, sugar, flour and spices are also added to this fruit base. Try adding a bit of ground ginger for a delicious spicy taste!
- The Topping – This topping is super simple made with flour, rolled oats, brown sugar and butter. Honestly, there is just no substitute for butter!
How To Make Rhubarb Custard Crisp
Put this recipe together in about
- Mix together the brown sugar, cinnamon and flour, add rhubarb to coat. Add egg and mix. Pour into baking pan.
- Combine dry topping ingredients, then cut in butter with two knives, a pastry blender or just use your fingers! Crumble until you achieve an even consistency.
- Spread topping evenly over rhubarb, and bake about 30 minutes.
Ways To Cook This Recipe!
I have made this both at home and while camping! Talk about a happy crew after a busy day on the water!
OVEN – use a baking dish or pie plate and bake at 350ËšF for about 30-35 minutes.
BBQ – you can use any barbecue safe pan, but I used a cast iron pan on the top rack – which worked perfectly. Once the BBQ is preheated, turn an end burner off and turn the other one on high. If there are 3 burners turn the burner at the opposite end of the one that is off on high, and the middle one on low. This helps the air circulate for more even baking in your BBQ. Bake for about 30 minutes, keeping a close watch as each BBQ is different and bake times will vary.
Fresh or Frozen?
You can definitely use fresh or frozen rhubarb for this recipe! And you can add in in frozen, no need to thaw first. In fact, it is better to measure while it is frozen to give an accurate measurement.
How To Serve Rhubarb Crisp
My favorite way to top a rhubarb custard dessert is with a scoop of vanilla ice cream! But I also just love it all by itself – maybe with an extra sprinkle of cinnamon on top. A heaping scoop of whipped cream is also a totally yummy way to crown this tasty dessert!

Ingredients
Fruit base
- 5 cups rhubarb diced ½-1 inch in size
- 1 cup brown sugar
- â…“ cup flour
- 1 teaspoon cinnamon
- 3 eggs
Topping
- ½ cup flour
- 1 cup oatmeal
- ½ cup brown sugar
- ½ cup butter
Instructions
- Preheat oven to 350ËšF (or heat BBQ to medium heat)
Fruit Base
- Combine the brown sugar, flour and cinnamon.
- Add the rhubarb and mix.
- Stir in the eggs and mix well. Pour into a 9" pan baking pan, or use a cast iron pan.
Topping
- Combine the flour, oatmeal, brown sugar.
- Blend the butter in until mixture is crumbly.
- Pour over the fruit base and spread evenly.
- Bake for 30-35 minutes.
