Apple Oatmeal Squares or Chocolate Dipped Strawberries are favorite desserts around our house. But when we get the opportunity to nab some fresh Saskatoon berries, the first thought is to make Saskatoon berry crisp!

Make Saskatoon Berry Crisp This Summer

Saskatoon Berry Crisp Ingredients

Saskatoon Berries: A Saskatoon berry strongly resembles a blueberry in size and shape. It is a bit more ‘firm’ than a blueberry and has a sweet, sort of nutty flavour. These berries are commonly found growing across the Canadian prairies and in parts of the U.S. Wild Saskatoon bushes can grow a considerable height, while wild blueberry bushes are found very close to the ground and the berries are very small. Commercially grown blueberries are larger and are almost a match for size with the Saskatoon berry.

Sugar: White sugar is mixed with the Saskatoon berries for the filling, while brown sugar is used in the streusel-like topping. Experiment with sugar substitutes if you require it for dietary reasons.

Rolled Oats: I use quick cooking oats for this recipe, but steel cut oats would work with additional cook time applied.

Flour: Used in the filling as a thickener, and in the topping to provide structure. For a gluten free option swap in gluten free flour at a 1:1 ratio.

Butter: You cannot beat the taste of real butter. But in a pinch, use marjarine.

How To Make Saskatoon Berry Crisp

  1. Sprinkle berries with sugar and flour. Add to baking dish.
  2. Combine dry ingredients in a bowl, blend butter in until crumbly.
  3. Pour crumble over the berries and pat down slightly.
  4. Bake (as directed in the recipe below).

Can I Use Other Berries or Fruits?

Yes! I have used this same topping and recipe with apples, rhubarb, peaches and blueberries. Mix the berries for interesting flavor combinations. Try a rhubarb-apple or rhubarb-strawberry combinations. Or create your own unique and delicious dessert.

Serving Saskatoon Berry Crisp

Serve berry, or fruit crisps warm with a scoop of vanilla ice cream on top! If you can, bake your crisp and allow it to rest on the counter for about 45-60 minutes before serving. It will be perfectly warm for you and your guests.

You can cook your crisp ahead of time and serve it cool, or warm it slightly before serving. Warm in a 250ËšF oven for about 20-30 minutes. Cover it with foil so that it does not dry out or that the topping will not become too browned.

Try a serving of cold berry crisp, topped with whipped cream in place of ice cream for a delicious treat.

Storing Saskatoon Berry Crisp

Store this berry crisp at room temperature for a few days, covered with plastic wrap or foil. You can also refrigerate it for about a week.

You may also freeze a berry crisp for several months. Wrap in plastic and then foil, plus label with the date. I highly doubt it will stay in the freezer very long before someone devours it!

If you find a patch of wild Saskatoon berries, be sure to pick them! Eat them fresh, freeze the rest, but be sure to save some for this Saskatoon Berry Crisp!

Saskatoon Berry Crisp

This easy Saskatoon Berry Crisp is a delicious dessert made with wild Saskatoon berries covered with a crunchy oatmeal crisp topping.

Equipment

  • 8×8 inch baking dish
  • mixing bowl

Ingredients
  

Berry Base

  • 4 cups Saskatoon berries
  • ½ cup sugar
  • 1 Tablespoon flour
  • 1 Tablespoon lemon juice optional

Topping

  • 1 cup flour
  • 1½ cups rolled oats
  • ¾ cup brown sugar
  • 1 cup butter

Instructions
 

  • Gather your ingredients, preheat oven to 350ËšF and lightly grease an 8×8 inch baking dish.

Berry Base

  • Wash berries and pat dry.
  • Stir in ½ cup sugar and 1 Tablespoon flour. (Add lemon juice at this time if using)
  • Pour into prepared pan.

Topping

  • Mix together the flour, rolled oats and brown sugar.
  • Add 1 cup butter and with your fingers or a pastry blender, blend the butter until mixture is crumbly.
  • Add crumbled mixture on top of berries.

Bake for 30-35 minutes until golden

    Notes

    • Store Saskatoon berry crisp at room temperature for a few days, covered with plastic wrap or foil. Refrigerate it for about a week.
    • Freeze a berry crisp for several months wraped in plastic and then foil.

      I just made this and it was fantastic. I made it with 1/2 Saskatoon berries and 1/2 blueberries as I didn’t know if I’d like the Saskatoon alone, first time having them. The mixture was delicious and the next one will be all Saskatoon.
      Do you cook it before freezing?
