How to make No Bake Chocolate Oatmeal Cookies

  1. Gather your ingredients and prepare a parchment lined pan. I often place the parchment directly on my countertop to save on dishes.
  2. Combine all ingredients (except the oatmeal) in a saucepan and melt together.
  3. Turn heat to medium and cook until it comes to a boil.
  4. Remove from heat and add the oatmeal. Stir.
  5. Drop by heaping spoonfuls onto the parchment paper. Cool and enjoy.

Why is Oatmeal a great choice to include in your diet?

According to Healthline, oats are a healthy choice because they are high in fibre, contain vitamins and minerals, and they have various other health benefits such as reducing cholesterol and lowering blood sugar levels. While oats are gluten free, sometimes during processing, they may come in contact with grains that do have gluten. So if you have a gluten allergy, make that it is labelled as gluten free.

Adding oats to your diet does not need to be difficult. I like to use rolled oats as a binding ingredient in meatballs, meatloaf or hamburgers. I also add it to other cookie recipes, to Overnight Oats with Yogurt, as well as other breakfast ideas like Fruit and Oatmeal Breakfast Bars or my Festive French Toast Bake.

Storing No Bake Cookies

  • Once cooled, store these tasty treats in an airtight container on the counter for 1-2 days.
  • Any longer, place in a zippered bag, or other airtight container, in the refrigerator for up to a week or in the freezer for up to 3 months (if they last that long before being devoured!)
  • The issue is not whether they will go bad, it is more about them becoming dried out. These no bake chocolate oatmeal cookies are meant to be ooey and gooey, not dry and hard – so keeping them airtight is the key!
  • Pop in the microwave for 10 seconds to soften if they begin to dry.

No Bake Chocolate Oatmeal Cookies

These no bake chocolate oatmeal cookies are one of the easiest treats to make. 

Equipment

  • saucepan
  • parchment paper

Ingredients
  

  • ½ cup butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • cup cocoa
  • ½ cup milk
  • ¼ teaspoon salt
  • 4 cups large flake rolled oats

Instructions
 

  • Prepare a pan lined with parchment paper. Or alternately, simply lay out parchment paper on your countertop.
  • In a saucepan melt butter together with white sugar, brown sugar, cocoa, milk and salt.
  • Over medium high heat, bring to a boil.
  • Remove from heat and add rolled oats. Stir till completely covered.
  • Drop by tablespoon or cookie scoop onto parchment paper and allow to cool.
