I just love simple and easy to make recipes! And these No Bake Chocolate Oatmeal Cookies are a perfect example of that! Heat the ingredients on the stove, mix in the oatmeal and simply drop by spoonful onto parchment paper. In just a few short minutes you have the perfect lunch box treat. And don’t worry if these cookies are not perfectly shaped. These heaps of chocolatey goodness taste good no matter how they look!

We so often forget about the tried and true recipes that have been passed down through generations, and some of those vintage recipes are the best! I know No Bake Oatmeal Cookies have been around for a long time, likely because they are so yummy and super easy to make!
Because these cookies are so simple to make they are perfect for teaching your ‘littles’ to make their own treats! I know this is one of the first recipes I learned to make as a child, and it is commonly found in the Foods courses in schools.
How to make No Bake Chocolate Oatmeal Cookies
- Gather your ingredients and prepare a parchment lined pan. I just place the parchment directly on my countertop to save on dishes.
- Combine all ingredients (except the oatmeal) in a saucepan and melt together. Turn heat to medium and cook until it comes to a boil.
- Remove from heat and add the oatmeal. Stir.
- Drop by heaping spoonfuls onto the parchment paper.
- Cool and enjoy.
Why is Oatmeal a great choice to include in your diet?
According to Healthline, oats are a healthy choice because they are high in fibre, contain vitamins and minerals, and they have various other health benefits such as reducing cholesterol and lowering blood sugar levels. While oats are gluten free, be aware that during processing, they may come in contact with grains that do have gluten. So if you have a gluten allergy, you need to be sure that it is labelled as gluten free.
Adding oats to your diet does not need to be difficult. I like to use rolled oats as a binding ingredient in meatballs, meatloaf or hamburgers. I also add it to other cookie recipes, to Overnight Oats with Yogurt, as well as other breakfast ideas like Fruit and Oatmeal Breakfast Bars or my Festive French Toast Bake.
How should you store No Bake Chocolate Oatmeal Cookies?
Once cooled, store these tasty treats in an airtight container on the counter for 1-2 days. Any longer place in a zippered bag, or other airtight container, in the refrigerator for up to a week or in the freezer for up to 3 months (if they last that long before being devoured!)
The issue is not whether they will go bad, it is more about them becoming dried out. These No Bake Chocolate Oatmeal Cookies are meant to be ooey and gooey, not dry and hard – so keeping them sealed well is the key!

No Bake Chocolate Oatmeal Cookies
Ingredients
- ½ cup butter
- 1 cup white sugar
- 1 cup brown sugar
- â…“ cup cocoa
- ½ cup milk
- ¼ teaspoon salt
- 4 cups large flake rolled oats
Instructions
- Prepare a pan lined with parchment paper. Or alternately, simply lay out parchment paper on your countertop.
- In a saucepan melt butter together with sugars, cocoa, milk and salt.
- Over medium high heat, bring to a boil.
- Remove from heat and add rolled oats. Stir till completely covered.
- Drop by tablespoon or cookie scoop onto parchment paper and allow to cool.
