Sweet Reasons to Indulge

  • My friend Deanna and I collaborated to create a new recipe for Valentine’s Day. We wanted one that would be positively decadent and had to be totally delicious. The outcome was this Amaretto cheesecake brownies recipe.
  • Cheesecake and brownies are such a delicious combination, but spiking them with amaretto is what makes them simply amazing.
  • These brownie bottom cheesecakes are perfectly sized for any occasion. Add them to a holiday dessert tray, for girls’ night in, dinner parties, special celebrations, or when you just want to treat yourself.

Ingredients for Indulgence

  • Brownie Base: The fudgy and rich layer sets the stage for this dessert. Sugar sweetens, cocoa deepens the chocolate flavor, butter and eggs give moisture and structure, and a splash of Amaretto adds that warm almond note that makes every bite special.
  • Cheesecake Layer: Silky cream cheese meets sugar, eggs, and a touch of vanilla for that classic and luxurious cheesecake texture. 
  • Chocolate Sauce: Semi sweet chocolate and butter make a glossy drizzle, while Amaretto adds a subtle almond warmth. This is the layer that makes your dessert look as irresistible as it tastes.
  • Toppings: Toasted almonds bring a wonderful crunch and nutty aroma, while the whipped cream adds a creamy light flavor.

Variations:

  • Use a boxed brownie mix instead of homemade. Be sure to substitute the water in the recipe with amaretto liqueur.
  • Top these cheesecake brownies with anything you like. It could be chocolate shavings, fresh fruit, fruit preserves, or just serve them plain.
  • While the toasted slivered almonds are highly recommended, you can use without toasting.
  • These bite sized treats can also be made without the Amaretto for an alcohol free dessert.

How To Make Amaretto Cheesecake Brownies

  1. Prepare the brownie base, scoop into lined muffin tins and bake. Allow to cool.
  2. Prepare the cheesecake layer and pour on top of the brownie base. Bake further and cool.
  3. Top with chocolate sauce, whipping cream and toasted almonds.

Nook-Worthy Tricks

  • Room temperature cream cheese is key for easy and ultra-smooth blending. 
  • Don’t overbake the brownie base because it will finish baking when the cheesecake.
  • Cool completely before adding the chocolate sauce and whipped cream topping.  
  • Want extra almond flavor? Add a tiny drop of almond extract to the whipped cream if you make it from scratch.

Amaretto Lovers Cheesecake Brownies

Amaretto Lover’s Cheesecake Brownies are so decadent and just perfect for a romantic night in! If you like amaretto, you are going to love this dessert!

Equipment

  • muffin tin
  • 2 mixing bowl
  • Microwave safe bowl

Ingredients
  

Brownie Layer

  • 1 cup sugar
  • cup flour
  • ½ cup cocoa
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup butter
  • 2 eggs beaten
  • 4 Tablespoon Amaretto liqueur

Cream Cheese Layer

  • 2 cream cheese 8 ounce blocks, room temperature
  • ½ cup sugar
  • 2 eggs
  • ¼ teaspoon vanilla
  • 2 Tablespoons Amaretto liqueur

Chocolate Sauce

  • ½ cup semi sweet chocolate
  • 2 Tablespoons butter
  • 1 Tablespoon Amaretto

Topping

  • ½ cup toasted almonds
  • whipped topping or whipped cream

Instructions
 

  • Preheat oven to 350˚F. Line 24 muffin tins with cupcake liners.

Brownie Base

  • In a bowl, mix together the sugar, flour, cocoa, baking powder and salt.
  • In a small bowl, melt butter. Add to dry ingredients along with beaten eggs and amaretto. Mix and drop by spoonful into each cup.
  • Bake brownie base for 8-10 minutes until just done.
  • Remove and cool on a baking rack.

Cheesecake Layer

  • In a bowl, cream together the cream cheese and sugar till smooth.
  • Add eggs one at a time till combined. Add the vanilla and amaretto.
  • Pour evenly over cooled brownie base and bake at 350˚F for 20 minutes. Remove and cool on baking rack.

Chocolate sauce drizzle

  • In a microwave safe bowl, combine chocolate and butter. Melt on medium high for about 1 minute, until chocolate is melted and smooth.
  • Stir in Amaretto until smooth.

Topping

  • Place almonds in a heat proof container and bake for 10 minutes in a 350˚F oven for 10 minutes. Stir every 2 minutes to ensure even browning. Cool.
  • Top each cheesecake brownie with chocolate drizzle, whipped cream and toasted almonds.
