Healthy Breakfast Cookies are a great way to begin your day. They are jam packed with the goodness of bananas, peanut butter, honey, rolled oats, coconut flakes, ground flax, chia seeds and hemp hearts. A whole lot of hearty, healthy, deliciousness in one little cookie.

If you are like me, you crave a mid-morning or mid-afternoon snack. I will often make a yogurt and berries parfait, or grab a slice of Strawberry Banana Bread from the freezer. But when I want a snack that really satisfies my hungry tummy, I choose one of these yummy peanut butter breakfast cookies.

Cookies and breakfast may not seem to go together very well…except in this case! These Healthy Breakfast Cookies are perfect at breakfast or any other time of day. Enjoy this cookie with your daily coffee fix or a tall glass of cold milk. Either way it is a great way to add a nutritious snack to your diet.

How do you make Healthy Breakfast Cookies?

  1. As with every recipe, assemble your ingredients first. There is just nothing worse than getting in the middle of a recipe only to find a missing ingredient!
  2. Preheat oven and line a baking sheet with parchment paper.
  3. Mash your bananas, then add peanut butter, honey and butter.
  4. In a medium bowl, combine the remaining ingredients. Then add the wet ingredients into the dry and mix.
  5. Drop by spoonful onto baking sheet and bake for 13 minutes.

What mix-in’s could you add to these breakfast cookies?

  • An obvious addition is of course nuts! Pecans, almonds, walnuts – whatever you love!
  • Use coconut oil in place of the butter, or use half oil and half butter.
  • Raisins would be a terrific addition!
  • And of course, it goes without saying – add chocolate chips if you want!

Breakfast is an important meal. After a long night without nourishment your body needs fuel to take on the day ahead. These Healthy Breakfast Cookies are the perfect way to energize your body for a busy day.

The main ingredient in these breakfast cookies is oatmeal. Oatmeal is a great source of fibre, vitamins and minerals. The hemp, flax and chia seeds are great sources of healthy fats, along with a world of other health benefits! Peanut butter is a good source of protein, vitamins and minerals and may help manage blood sugar.

So these tiny health cookies are both delicious and nutritious!

How should you store these Healthy Breakfast Cookies?

Cool the cookies on a rack, then store in an airtight container. You can keep them stored this way on your counter for a couple of days, just like any other regular cookie.

Any longer than a couple days and I would move them to the refrigerator or freezer. These cookies will stay in the fridge or about 4-5 days and in the freezer for about 3 months.

Ingredients
  

  • 2 bananas ripe
  • 1 cup peanut butter
  • ¼ cup honey
  • ½ cup butter melted
  • 2 cups rolled oats
  • 2 tablespoons ground flax
  • 1 tablespoon chia seeds
  • 3 tablespoons hemp hearts
  • ½ cup chocolate chips optional

Instructions
 

  • Preheat oven to 350ËšF. Line a baking sheet with parchment paper.
  • Mash bananas. Add the peanut butter, honey and coconut oil and mix together.
  • In a medium bowl add the rolled oats, flax, chia seeds, hemp hearts and chocolate chips (if using)
  • Add the liquid ingredients to the dry ingredients and mix.
  • Drop by spoonful onto baking sheet and flatten slightly.
  • Bake for 13 minutes. Remove and cool on baking rack.
