Chocolate Covered Rice Krispie Treats
Chocolate Covered Rice Krispie Treats are a super basic, but oh so delicious dessert square! A marshmallow and Rice Krispie base is covered with a luscious chocolate topping laced with peanut butter and sprinkled with crushed peanuts. It’s so tempting just looking at it!
While I absolutely love the classic, original Rice Krispie Squares all on their own, I have to admit that adding the chocolate topping really kicks this dessert up a notch! When I make this treat, my family just can’t get enough of it. It is literally gone almost as fast as it is made!

Who can remember loving Rice Krispie treats as a child? I know I sure do! My mom made them often, especially to take with us on camping trips to one of the Northern Saskatchewan lakes.
My mother in law loved making them too. You could count on a freshly made pan of Rice Krispie squares ready and waiting for us when we came for a visit!
How to make Chocolate Covered Rice Krispie Treats
- Prepare your pan with parchment paper. This makes removal and slicing so much easier!
- Assemble all your ingredients.
- Melt the margarine in a large microwave safe bowl and swirl in around the bowl, then add the marshmallows. Melt in the microwave at half power until smooth. This may take between 3 – 5 minutes depending on the wattage of your microwave.
- Add the Rice Krispies to the marshmallow mixture. Greasing your rubber scraper will help minimize the marshmallow mixture from sticking to it. You may also find it helpful to use your hands to press the marshmallow mixture into the pan. Just remember to grease your hands well before doing this.
- Melt the chocolate chips, corn syrup, butter and peanut butter in a saucepan over medium heat on the stove, or in a microwave safe bowl at half power in the microwave. Stir until smooth and velvety.
- Pour chocolate mixture over the entire base, then sprinkle with crushed peanuts.
- Allow to set on the counter, or speed up the process by placing in the refrigerator. Using the parchment paper to remove from the pan, place on cutting board and cut into squares.
Are there any modifications for this Rice Krispie treat recipe?
I love it when I can make changes to recipes, to make them truly unique. And this dessert square is definitely one you can play around with and make your own!
- Add crushed peanuts or other nut of your choice, flaked coconut and/or raisins to the base layer.
- Substitute other dry cereals in place of the Rice Krispies. Or use a combination!
- Add ½ cup peanut butter to the base layer to increase the peanut butter flavor! In this case, reduce the margarine to ¼ cup.
- Use a smaller pan for a thicker dessert bar. I use a 9×15″ sheet pan, but this can easily fit a 9×13″ or even a 9×9″ pan.

Equipment
- 9 x 15 inch sheet pan
- parchment paper
- Microwave safe bowl
Ingredients
Base
- ½ cup margarine
- 40 large marshmallows
- 5-6 cups crisp rice cereal
Chocolate Topping
- 1½ cups semi sweet chocolate chips
- ¼ cup corn syrup
- â…“ cup butter
- ½ cup peanut butter
- ¼ cup chopped peanuts
Instructions
Base
- Prepare a 9 x 15″ sheet pan with parchment paper and gather all your ingredients.
- Melt margarine in the microwave in a large bowl.
- Add marshmallows and toss with melted margarine.
- Return to microwave and melt on half power for 1 minute intervals, stirring in between until marshmallow mixture is smooth.
- Add crisp rice to marshmallow mixture and combine.
- Press firmly into sheet pan.
Chocolate Topping
- Combine chocolate chips, corn syrup, butter and peanut butter in a saucepan and melt over medium heat till smooth.
- Pour over the crisp rice base and smooth to cover completely.
- Sprinkle with crushed peanuts. Refrigerate for 1 hour before removing from pan using the parchment paper, then cut into squares.
