This easy Banana Loaf is one of my absolute favorite recipes! Ripe bananas, along with staple ingredients found in your cupboard like flour and sugar, are combined with a “special” ingredient to make one of the most moist and delicious banana loaves you have tried!

Let’s Make Banana Loaf!

This recipe is so super easy to make!

  • I begin by mashing the bananas using an electric mixer to avoid any banana chunks.
  • Then add the eggs, melted butter and sour cream until blended.
  • Stop the mixer and add the remaining ingredients. Mix on low till just combined.
  • Pour into prepared 9×5″ loaf pan and bake.
  • Cool completely.

Is There A Difference Between Banana Loaf and Banana Bread?

Where I grew up, we used the terms banana loaf or banana bread interchangeably, so I do not believe there is a difference.

What Can You Add To Banana Loaf?

Use your imagination and a little creativity to your next banana loaf! You can add things like:

  • chocolate chips
  • nuts like walnuts or pecans
  • dried fruit like raisins or cranberries
  • other spices such as nutmeg, cinnamon or even pumpkin pie spice

Tips for A Moist Banana Loaf

  • Use very ripe bananas! I love to stash ripe bananas in my freezer and use them up in my banana loaf!
  • Add sour cream! Or if you have greek yogurt, that will also do the trick in a pinch.
  • Do not over bake your loaf. Set your timer for the allotted time, or even 5 minutes sooner, then check frequently after that. It will be perfectly done once a toothpick inserted comes out clean.
  • Use room temperature ingredients.
  • Cover tightly with plastic wrap once cooled. I also like to seal it in a zippered bag.

Ingredients
  

  • 3 bananas mashed
  • 2 eggs
  • ½ cup sour cream
  • ½ cup butter melted
  • ½ cup sugar
  • 2 cups flour
  • 1 teaspoon baking soda
  • teaspoon salt

Instructions
 

  • Preheat oven to 350˚F and line a 9x5 inch loaf pan with parchment paper. Spray the pan and paper as well.
  • In a small bowl mash bananas, add the eggs, sour cream and melted butter. Mix together.
  • Stop the mixer and add the sugar, flour, baking soda and salt.
  • Mix on low till just blended.
  • Add to loaf pan and bake for 50 minutes or until a toothpick inserted comes out clean.
  • Cool on baking rack.
