The Cream of the Crop Ingredients
Heavy Cream: Necessary to creates the luxurious texture that makes this custard thick, silky, and smooth.
Sugar: Sweetens the custard and balances the rich cream and egg yolks.
Cornstarch: Acts as the thickener, giving the filling enough structure to spread or pipe without becoming runny.
Vanilla Bean: Adds warm, floral vanilla flavor that’s far more aromatic than vanilla extract alone. Plus those tiny vanilla bean specks are so pretty!
Egg Yolks: Create a velvety texture and help the custard thicken into a smooth, creamy filling.
Butter: Used to create a silky finish with a glossy appearance.
Salt: While optional, just a small pinch is all you need to enhance the sweetness and make the vanilla flavor stand out even more.
How To Make Vanilla Custard Filling
In a saucepan, whisk sugar, cornstarch, and heavy cream.
Remove seeds from vanilla bean and add to mixture then warm over medium heat.
Whisk a little warm cream into the egg yolks, then stir the warmed yolks back into the saucepan.
Cook, stirring constantly, until the custard is thick and smooth. Add butter and mix.
Cover with plastic wrap and cool.
Custard Confidence
After scraping the vanilla bean, add the entire bean into the cream and heat for extra flavor. Take the bean out before thickening.
Be sure to temper the eggs slowly by whisking the warm cream into the egg yolks a small amount at a time. This prevents the eggs from scrambling.
Cook over medium heat so the custard doesn’t thicken too quickly or become lumpy.
Whisk constantly. This helps the custard stay smooth and prevents it from sticking to the bottom of the pan.
Press plastic wrap onto the surface of the custard to prevent a skin from forming as it cools.
Chill for two hours, or more, to allow the custard to fully set for the best texture.
Sweet Storage Solutions
Refrigerate vanilla custard filling in an airtight container for up to 3 days.
I don’t recommend freezing this custard. The texture can become grainy or separate once thawed, making it less smooth and creamy.
Before using chilled custard, give it a gentle whisk to restore its silky consistency if it has firmed up slightly.
