Pineapple Stuffing Recipe

Ingredients

  • ½ cup butter
  • ¾ cup brown sugar
  • ½ teaspoon cinnamon or pumpkin pie spice for sprinkling, optional
  • 4 eggs
  • 18 ounces crushed pineapple with juice use 540 ml can
  • 4-5 cups fresh bread cubes * cut into 1 inch cubes

Instructions

  • Preheat oven to 350˚F. Grease a 2 quart casserole dish or 9 inch baking dish.
  • To a large bowl add melted butter, sugar and cinnamon. Whisk eggs, add to mixture, and mix everything together.
  • Add pineapple to mixture and stir to combine. Fold in the bread cubes carefully.
  • Turn the bread mixture into the prepared baking dish.
  • Bake for 45-55 minutes, or until brown.

Notes

  • *about 8 slices of bread with crusts removed.
  • Refrigerate leftovers, once cooled, in an airtight container or wrapped with plastic wrap, for up to 4 days. This cooked casserole can be frozen for up to 2 months.
  • Thaw in the refrigerator before reheating in a 300°F oven for 10-15 minutes, or in the microwave at short intervals, until warmed through.
