Ingredients

  • 24 large shrimp
  • ½ cup butter unsalted
  • 6 cloves garlic minced
  • 1 cup shredded cheese marble, Monterey Jack
  • 1 Tablespoon fresh parsley chopped
  • ½ lemon cut into 4

Instructions

  • Preheat oven to broil.
  • To a skillet, melt butter, add butter and cook for 1 minute.
  • Add shrimp in batches and cook until just turned from grey to pink. Do not overcook.
  • Place one shrimp in each escargot dish indentation. Distribute the butter and garlic over each shrimp evenly.
  • Top liberally with fresh parsley.
  • Sprinkle ¼ cup cheese over each escargot dish.
  • Place on a baking sheet, then place under the broiler for 2-3 minutes until the cheese is melted and a bit crispy.
