Blueberry French Toast Bake

Equipment

1 9 x 13" baking pan

Ingredients

  • 1 loaf thick sliced bread , such as Texas Toast, 675 gram size
  • 9 eggs
  • ½ cup brown sugar
  • 2 cups milk
  • ½ cup heavy cream
  • ½ teaspoon cinnamon
  • 1 Tablespoon vanilla extract
  • 1 cup frozen blueberries or fresh
  • ¼ package cream cheese

Topping

  • cup brown sugar
  • cup flour
  • ½ teaspoon cinnamon
  • ¼ cup butter

Instructions

  • Preheat oven to 350˚F. Grease a 9x13" baking pan (Or line with foil and spray with cooking spray)

The Casserole

  • Cut bread into 1 inch cubes, place in a bowl.
  • Whisk eggs, add milk, cream, cinnamon, brown sugar and vanilla. Pour over bread and toss to coat.
  • Pour bread mixture into prepared pan. Sprinkle blueberries over top.
  • Cut cold cream cheese into small cubes, and spread evenly over top.

Topping

  • Mix together brown sugar, flour and cinnamon. Cut cold butter into mixture with 2 knives, a pastry blender, or just using your fingers, until completely blended.
  • Sprinkle evenly over top of casserole.

Baking Instructions

  • Cover with foil and bake for 30 minutes. Remove foil and bake for 20-30 more minutes, or until a thermometer inserted reaches 160˚F.
  • Remove and allow to sit 10 minutes before serving.

To Serve

  • Serve with maple syrup, blueberry syrup, whipped cream or assorted berries.
