Equipment

cast iron pan (or other heavy saute pan)

Ingredients

  • 3 cups corn fresh or frozen
  • 1 Tablespoon butter
  • 2 slices bacon cut into small pieces
  • ½ jalapeno diced (use seeds or remove, depending on the level of spice desired)
  • salt and pepper to taste

Instructions

  • Cook bacon in cast iron pan for about 5 minutes. Bacon should be slightly crisp.
  • Add butter, corn and jalapeno.
  • Cook for about 5 minutes until corn is cooked and flavors have blended.
  • Season to taste.

Notes

  • Use fresh, frozen or canned corn.
  • For a spicier side dish, add the jalapeno and seeds. To make it more mild, do not add the seeds.
