Fruit base
- 5 cups rhubarb diced ½-1 inch in size
- 1 cup brown sugar
- ⅓ cup flour
- 1 teaspoon cinnamon
- 3 eggs
Topping
- ½ cup flour
- 1 cup oatmeal
- ½ cup brown sugar
- ½ cup butter
Fruit Base
Combine the brown sugar, flour and cinnamon.
Add the rhubarb and mix.
Stir in the eggs and mix well. Pour into a 9" pan baking pan, or use a cast iron pan.
Topping
Combine the flour, oatmeal, brown sugar.
Blend the butter in until mixture is crumbly.
Pour over the fruit base and spread evenly.
Bake for 30-35 minutes.
