Very Lazy Pierogies!
- This easy recipe is made in one casserole dish, and that means less dishes! Line the baking pan with foil for even quicker clean up.
- Using pre-made ingredients like frozen pierogies, canned soup and sausage means this recipe can be tossed together in no time at all.
- Layer the ingredients and set it to bake, leaving plenty of time to make a delicious vegetable or side salad. Or maybe even a rhubarb custard crisp for dessert!
Super Simple Ingredients!
Pierogies – Without a doubt, homemade pierogies are the best! But when time is tight and for this recipe, use any brand of frozen pierogi that is a favorite in your house. The ones pictured above are potato and cheddar filled and purchased from Costco. They are delicious in a pinch.
Meat – I grew up loving Mennonite farmers sausage, and still do! But my family prefers an Italian sausage, and we have tried both in this recipe. The Farmers sausage does not need to be fried prior to adding to the casserole, but I did anyway. I recommend cooking Italian sausage first, slice it into rounds or you can scramble fry it then add over the top. The choice is yours. Use bacon or even cooked ham in place of the sausage if preferred.
Sauce – Mushroom soup is my go to for this sauce, but cream of chicken or cream of celery would also work. Add milk, garlic powder, onion powder and pepper to taste. If you use less pierogis than in the recipe, cut back on the amount of milk. If you like sauce more thick, also use less milk or add a bit of cream cheese, sour cream or greek yogurt.
Cheese – Use a cheddar, marble or if you like a more mild flavor try mozzarella. But the options are only limited by your imagination. Use what you like.
How To Make Pierogi Casserole
- Cook sausage with butter and the whites of a green onion.
- Place pierogis in bottom of greased baking dish.
- Top with sausage and onion.
- Combine soup, milk, and seasonings. Pour over everything.
- Cover with foil and bake for 30 minutes.
- Uncover, add shredded cheese and bake for 15 min. Broil for 2-3 min if desired.
- Garnish with green onion, and topping of choice.
What To Serve With Pierogi Casserole?
I love to top my casserole with some sour cream, bacon bits and even more cheese! But feel free to use greek yogurt as a substitute for the sour cream. Other tasty toppings include sauteed mushrooms, peppers, even zucchini would be tasty! Or try adding some dill, parsley or a blend of other fresh herbs.
Serve pierogies with skillet jalapeno corn, steamed broccoli or cooked carrots. Or just a simple side salad would also be delcious. This pierogi casserole can also be made without any meat and served as a side dish along with a juicy baked ham.
Refrigerate leftovers in a covered container and reheat to serve with other entrees all week long. To reheat, stir in a bit of milk, cover with foil and bake in the oven for about 20 minutes. Or microwave portions at 30 second intervals.

Pierogi Casserole Recipe
Ingredients
- 2 Tablespoons butter
- 2 green onion whites reserve the greens for garnish
- 2 sausages mennonite or Italian sausage, sliced. Or as many as you like.
- 30 pierogies frozen
- 1 can cream of mushroom soup or other condensed cream soup
- 1½ cups milk
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1½ cups cheese shredded
Instructions
- Grease a 9×13" baking dish. Preheat oven to 350ËšF.
- Saute the whites of green onion in butter with sliced sausage for about 5 minutes.
- Meanwhile, mix together cream of mushroom soup, milk and seasonings until smooth.
- Arrange frozen pierogies in baking dish, cover with sausage and onion, then pour soup mixture over everything.
- Cover with foil and bake for 30 minutes. Uncover, add shredded cheese and bake for 15 minutes longer until hot and bubbly.
- You may want to set dish under the broiler for a couple minutes to brown the cheese nicely.
Notes
- Refrigerate leftovers in a covered container and use up within about 4-5 days.
- To reheat:
- Stir in some milk, cover with foil and bake at 350ËšF for about 20 minutes.
- Microwave portions at 30 second intervals until warm.
