These Peanut Butter Crunch Bars with caramel icing are a delicious combination of crisp, crunchy cereals, smooth and creamy peanut butter along with sweet caramel icing. If you love peanut butter, you will love this dessert!

Peanut butter is such a great flavor for dessert dishes and my family loves it. Two of their favorite peanut butter based desserts are my Easy Peanut Butter Dessert and my Brownie Bottom Peanut Butter Cream Pie! They just can’t get enough of them!

Peanut butter desserts are always a favorite. And these Peanut Butter Crunch Bars are not only yummy, but so easy to make as well. Sweet caramel and peanut butter goodness are in each and every bite. These sweet peanut desserts are not for the faint of heart.

How Do You Make Peanut Butter Crunch Bars?

These crunch bars are so easy to make!

  1. Cook brown sugar, butter and corn syrup.
  2. Add the remaining base ingredients, mix and press into pan.
  3. Prepare caramel icing and spread on top of base.

How Do You Store These Peanut Butter Crunch Bars?

These delicious crunch bars can be stored at room temperature for a day. Any longer than that, I would store in an airtight container in the refrigerator. They will last for 1-2 weeks.

These caramel frosted bars freeze very well. You will be able to store them in the freezer for up to 3 months. Because they keep so well in the freezer, they are perfect to make ahead and keep on hand in case company drops by unexpectedly.

Can you modify this Peanut Butter Crunch Bars recipe?

I love recipes that can be modified!

  • Sprinkle coarse salt or sea salt on top of the icing for a salted caramel inspired treat!
  • Choose a smaller pan, such as an 8×8″ pan, to make a thicker dessert treat.
  • Use a chocolate icing or ganache in place of the caramel icing.
  • Change up the types of cereals used in the base or use what you have on hand. Crushed Chex, Cheerios or even Shreddies can be used as substitutes.

Peanut Butter Crunch Bars

If you love peanut butter, you will love this Peanut Butter Crunch Bars dessert! There is sweet caramel, peanut butter and crispy cereal in every bite.

Equipment

  • 9×9 inch pan
  • saucepan

Ingredients
  

Base

  • ½ cup brown sugar
  • ½ cup butter
  • â…“ cup corn syrup
  • 1 cup peanut butter
  • 1 teaspoon vanilla
  • 2 cups Corn Flakes
  • 2 cups Rice Krispies

Caramel Icing

  • 2 Tablespoons cream
  • 1 Tablespoon butter
  • ½ cup brown sugar
  • 1 Tablespoon corn syrup
  • 1 teaspoon vanilla
  • 1 cup powdered sugar , divided

Instructions
 

  • Line a 9″x9″ pan with parchment paper.

Base

  • Mix brown sugar, butter and corn syrup in a saucepan and bring to a boil. Boil for 1 minute.
  • Stir in vanilla, then add the peanut butter, Corn Flakes and Rice Krispies. Mix well. Turn into the prepared pan and press down evenly. Chill.

Caramel Icing

  • Bring all ingredients, except powdered sugar, to a boil in a saucepan. Boil for 2 minutes. Cool slightly. 
  • Add powdered sugar ¼ cup at a time and beat with a hand mixer. Use only enough icing sugar to thicken the icing to your liking.
  • Spread on cooled peanut butter base.
