Using just 4 simple ingredients that are likely already on hand, these decadent hand held treats can become a staple treat in any kitchen.

Easy Ingredients!

  • BANANAS – Ripe bananas are perfect for this recipe! Once those ‘nanners’ are too ripe to enjoy, the best thing to do is make a banana loaf, muffins or these oatmeal banana chocolate chip cookies!
  • PEANUT BUTTER – Use creamy smooth or crunchy peanut butter, it won’t matter! These tasty morsels will be delicious with both. Try other nut butters if desired.
  • ROLLED OATS – Instant oats are best for this recipe. The oats act as the binder for these decadent cookies, plus add fiber and nutrition. For other add-in’s, try some flax, wheat germ, hemp or chia seeds. Try a combination of all!
  • CHOCOLATE CHIPS – The decadent portion of these cookies! If looking for a more healthy option, trade out the chips for raisins, or other dried fruit. Don’t use more than indicated so it will not affect the structure of the cookie.

How To Make Peanut Butter Banana Oatmeal Cookies

  1. Mash bananas and blend in peanut butter until smooth.
  2. Add rolled oats and chocolate chips. Mix well.
  3. Drop by tablespoon onto baking sheet, and bake.

TIP! Let cookies rest 2 minutes on baking sheet, then remove to a wire rack to finish cooling.

Use an air fryer! These cookies could also be baked in an air fryer. Line the basket with parchment paper, and set air fryer to 300ËšF. Once heated place cookies in and bake for 7 minutes. If using an air fryer with a top and bottom rack, be sure to rotate cookies at the half way mark.

Use a barbecue! While an oven is preferred for accurate temperature, a barbecue will also work in a pinch. (These cookies were actually made on the BBQ at the lake, hence the terrible looking baking pan!) Keep one burner at high temp, middle at low and the far burner off. Place cookie sheet on the side that is off, and rotate every 5 minutes until cooked. It may not be the best way to bake cookies, but works well in a pinch. So when it’s too hot outside to heat up the house using an oven, try baking on the barbecue!

Recipe Tips !

Use ripe bananas! It’s best to use very ripe bananas. Not only are they easier to mash, but they are more sweet as well. If bananas are ripe and the urge to bake is just not there, simply peel the bananas, place in a container or zippered bag and freeze until ready to use. Thaw bananas and use in any favorite recipe.

To mash bananas – Using the back of a fork and a bowl or plate, mash bananas until very smooth. Alternately a hand blender or even hand mixer will work as well.

Don’t overmix the dough! Combine ingredients together until they are just mixed for the best texture.

Use a cookie scoop! For perfectly sized treats, use a cookie scoop. It’s so quick and easy for drop cookies, or even cookies that need to be rolled. Alternately, and what was used in this case, two spoons will work.

  • 1 cup mashed bananas about 3 ripe bananas
  • 1 cup peanut butter
  • 2 cups rolled oats
  • ½ cup chocolate chips

Instructions
 

  • Preheat oven to 350ËšF.
  • Blend peanut butter and mashed banana together well.
  • Add oats and chocolate chips. Mix
  • Drop by tablespoon onto baking sheet.
  • Bake for 15 minutes. Rest on baking sheet 2 minutes, remove to rack to cool completely.

  • Mash very ripe bananas using the back of a fork and a bowl or plate. Or use a hand blender or even a hand mixer.
  • Combine ingredients together until they are just mixed and avoid over mixing the cookie dough.
