Peach Scone

This peach scone is so simple to make. Simple, staple ingredients you likely already have on hand, is all you need to prepare this delightful treat. They will remind you of the ones your grandma or great aunt used to make!
This recipe is inspired by my piano teacher, Mrs. McMurphy. I walked to her home after school once a week, and was greeted with a treat and a cup of tea. Sometimes it would be chocolate chip, oatmeal cookie or even a brownie, but sometimes it was a fresh scone! This was a very special treat because my mom did not normally make scones. She was more like a grandmother to me than a piano teacher so this easy scone recipe brings back many happy memories of her.

What is a Scone?
Scones are a traditional English biscuit or bread-like treat. They have a light, buttery flavour and are a bit dense in texture. They can be formed into a circle or cut into triangles as shown here. Made with staple pantry ingredients, they are easy to make and can be adapted to your liking.
How To Make A Scone?
While this process may seem foreign to many, learning how to make a scone is really fairly simple. You need to remember a few simple tricks and you will be set!
- Assemble all your ingredients, preheat your oven and prepare your baking pans.
- Combine all dry ingredients.
- Work the butter into the dry mixture with a pastry blender, or as I like to do, use your fingers. I love to feel the consistency and that all the butter is worked in with no clumps.
- If you are adding fruit to your scone, such as peaches, do so now.
- Combine the milk and egg, and pour into flour mixture. Mix until just combined.
- Lightly flour your work surface and turn out the dough. Flatten and cut into 4 even pieces. Work each piece into a circle, then cut each into 4 pieces. Flour hands during this process to prevent the dough from sticking.
- Place on baking sheet and bake for 15 minutes or until lightly browned.
Once you have successfully made this delicious recipe, you may be wondering how to store scones? I always think about storing them the same way you would buns or dinner rolls. Once cooled, place in an airtight bag. You can keep them on the counter or the refrigerator for a few days. Remember, there are no preservatives in this recipe so they will not have the same shelf life of store bought product. Can you freeze scones? Yes, just as any other bread-like product, scones freeze very well! Again, in an airtight bag once completely cooled.
If you can keep these peach scones in your freezer before being devoured by your family, they make a great treat to grab for last minute guests or a quick breakfast!
What Can You Serve With A Scone?
- Scones have traditionally been served at afternoon tea time. A topping such as fruit jam or jelly usually accompanies the snack! I love to eat mine with just a bit of butter, but the fruit topping is delicious as well. Don’t reserve for tea time only, I love a scone with my morning coffee too!
- Some optional types of scones you can create by simply modifying this recipe are blueberry scones, cranberry orange scones, pumpkin scones and even chocolate chip scones!
- While I love these as a slightly sweet treat, these dense and biscuit-like rolls can also be served as a more savoury side dish. Substitute a bit of shredded cheese to the mix in place of fruit and serve at lunch or dinner. They would be delicious alongside a bowl of tomato soup or one of your favorite homemade soups! Cube up some ham to add to the cheese for a delicious and easy lunch option.

Peach Scone
Ingredients
- 3 cups flour + extra for pressing out on a board
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ cup sugar
- ½ teaspoon salt
- ½ cup butter cold
- 1 cup peaches frozen
- 1 cup soured milk
- 1 egg
Instructions
- Preheat oven to 350ËšF and line a baking sheet with parchment paper. Assemble all ingredients.
- Combine the dry ingredients and mix.
- Cut cold butter into dry ingredients and blend with a pastry blender, or use your fingers, until it is fully combined and a crumbly consistency.
- Add peaches and mix to flour peaches completely.
- Beat egg with sour milk and pour over flour mixture.
- Mix to just combine.
- Turn out onto floured surface and with floured hands, pat down. Cut into 4 sections and mould these into circles.
- Cut each circle into 4 and place on baking sheet. Be sure to keep flouring hands during the process.
- Bake for 15-20 minutes until lightly brown.
