Ingredients
Celebration Caramel Milk Chocolate Cookies: These chocolate covered cookies are the perfect size and shape to sit at the bottom of a muffin tin and make a quick and easy base for these mini cheesecakes.
Cheesecake Layer: Made with regular cheesecake ingredients like cream cheese, an egg, sugar and vanilla, this layer is creamy and indulgent.
Topping: This recipe calls for mini chocolate chips on top of the cheesecake layer and a store bought or a homemade caramel sauce for that finishing touch.
Variations
- Mix 1 ½ cups graham cracker crumbs with ½ cup melted butter together well, then press firmly into each muffin cup. Proceed with the cheesecake layer and bake.
How To Make Caramel Mini Cheesecakes
- Line each muffin tin space with a parchment liner and place a Celebration cookie at the bottom.
- Beat cream cheese with egg, sugar, and vanilla well.

Caramel Mini Cheesecakes Recipe
Equipment

Ingredients
- 12 Celebration Caramel Cookies
- 8 ounces cream cheese room temperature
- 1 large egg
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
- ½ cup dark chocolate chips or mini chocolate chips
- Toffee bits optional
- caramel sauce homemade or store bought
Instructions
- Preheat oven to 325˚F
- Line 12 muffin tins with cupcake liners. Place 1 Celebration cookie in each.
- In a mixing bowl, place softened cream cheese.
- Using a hand mixer, beat cream cheese on medium speed until fluffy. Add egg, sugar, and vanilla. Mix on medium speed, just until the mixture is smooth and creamy.
- Use a ¼ cup measuring cup add batter to the muffin cups.
- Sprinkle top with chocolate chips (and toffee bits if using).
- Bake for 15 minutes. Cheesecakes will be just slightly brown on edge.
- Cool on a rack for 15-30 minutes before removing from muffin tin. Place on a baking tray to cool completely.
- Refrigerate for 1 hour before serving. Serve plain, or top with a caramel sauce drizzle.
Notes
