A Delicious And Fresh Soup!

My family loves this soup for so many reasons, but the main one is the tasty lemon flavor! It brings just the right amount of zest to please any palate!

I love it because it’s quick and easy to make! This one pot soup is perfect for a busy evening or quick lunch!

Made with fresh wholesome ingredients, it’s a soup that is comforting, hearty and satisfying. Serve it with a fresh roll or side salad for a complete meal.

It is also a great way to use up leftovers! Turkey or chicken work well, but homemade ground turkey meatballs would be awesome too. And while this recipe uses fresh uncooked carrots, if there are some leftover veggies rom last nights dinner, toss them in towards the end of cook time!

Lemon Orzo Soup Ingredients

Simple, fresh ingredients that are likely already on hand in your pantry make this soup recipe a keeper! Use a large stock pot (mine is from IKEA and I love it!) – every kitchen needs a good sized stock pot for soups and stews!

  • Broth – Canned or homemade turkey (or chicken) broth are perfect in this recipe.
  • Meat – Cooked turkey (or chicken) work well, but ground turkey or chicken meatballs would also be delicious!
  • Aromatics – Diced onion, garlic, celery, carrots, rosemary and a bay leaf. Use what you have on hand, or that you prefer. I love fresh herbs! You will find fresh parsley in my fridge at all times, and it’s perfect used to finish off this soup!
  • Lemon! – Use as little or as much as you like!

Easy To Make One Pot Lemon Orzo Soup!

  1. Saute aromatics in oil and butter.
  2. Add broth and seasonings, bring to a boil. Add orzo and stir.
  3. Turn down to a simmer and cook until orzo is tender.
  4. Add turkey and lemon juice to taste. Garnish with parsley.

The Best Soup Tricks!

Do not overcook the aromatics. I add my onion first and cook it a bit longer as is my preference, but everything else just needs a bit of cook time. The celery and the carrot should not be mushy.

Use homemade broth when possible. If you can, make your own turkey or chicken stock. It’s really not that hard to do!

  • Brown the bones and carcass and add to a stock pot and cover with cold water.
  • Add onion, carrot, garlic, celery, rosemary, thyme, sage, salt and peppercorns. Bring to a boil for 1 -2 hours.
  • Strain and remove any meat from bones, then simmer clear broth for another hour to intensify the flavor.

Broth found in a tetra pack is usually good quality and will work if you cannot make a homemade broth.

Leftovers! Soup is as good the next day, and maybe even better! Refrigerate, once cooled, for 3-4 days and heat quickly in the microwave, or over low heat on the stove. Be careful not to heat too long as the pasta can become mushy.

Using simple ingredients you can make this hearty, comforting and zesty Lemon Orzo Soup on the stovetop in about 30 minutes!

Ingredients
  

  • ½ cup onion diced
  • 1 cup celery diced
  • 1 Tablespoon butter
  • 1 Tablespoon olive oil
  • 3 medium carrots diced
  • 3 cloves garlic minced
  • 1 teaspoon salt or to taste
  • 1 teaspoon rosemary
  • 8 cups turkey stock or chicken stock (or broth)
  • 1 bay leaf
  • 1½ cups orzo
  • 1 cup turkey or chicken, diced
  • 1 -2 lemons juiced, to taste
  • 1 Tablespoon fresh parsley

Instructions
 

  • Cook onion and celery in butter and oil until soft.
  • Add carrots and cook for 5 minutes. Add garlic and cook 1 minute more.
  • Add seasonings, stock, and bay leaf. Bring to a boil.
  • Add orzo, simmer at a low boil for 10 minutes until orzo is tender.
  • Stir in turkey and lemon juice to taste.
