Ingredients
Strawberries: Choose bright red, fully ripe strawberries for the best flavor. Avoid berries with white or green tips because they are not fully ripe and not as sweet.
Glaze: Strawberry Jell-O powder gives the glaze its glossy finish, while cornstarch and sugar help the filling hold it all together.
Pie Crust: Any store-bought pie crust will do, but I prefer Pillsbury’s refrigerated pie crusts that bake in your own pie plate (makes it look like a homemade crust…shhh!)
Garnish: Whipped cream, whether homemade or store-bought from an aerosol can, makes the perfect topping. Whipped topping, such as Cool Whip, works great and will hold up better in the summer heat. Don’t forget to add a few strawberry slices for garnish.
Variations
- Get creative and play around with different types of crust. You can make your own pie dough from scratch, use a graham cracker crust, or even try a chocolate graham crust like the one found in this chocolate peanut butter lasagna. Gluten-free options are also available.
- Go crust free and pour the filling directly into a pie plate, or pour into dessert cups for unique individual treats.
- The original recipe uses 3 cups of strawberries, but I love using 4 cups for an extra fruity pie. Feel free to experiment with the amount of fruit that suits you best.
- Use sugar free Jello-O if needed.
- Try adding other fruits like blueberries, raspberries, sliced peaches, or even some cooked rhubarb for a tasty twist. You can also swap in other Jell-O flavors, like peach or raspberry, for a unique spin. Try adding a splash of peach schnapps to the glaze mixture for a delicious twist.

How To Make This Fresh Strawberry Pie Recipe

You can freeze the pie whole, covered with plastic wrap and then foil, for up to 3 months. Or freeze each piece individually by wrapping in plastic wrap and then foil. Thaw in the refrigerator before serving.

Fresh Strawberry Pie Recipe
Equipment
- pie dish
- medium pot
Ingredients
- 1 baked pie shell homemade or store bought
- 4 cups diced strawberries
- 1 cup water
- 1 strawberry Jell-o powder 3 ounce size
- ⅓ cup granulated sugar
- 2 Tablespoons cornstarch
Instructions
- Clean and dice strawberries.
- In a medium pot, combine water, strawberry Jell-O powder, cornstarch and sugar. Stir until cornstarch is dissolved.
- Bring Jello-O mixture to a boil over medium heat. Stir constantly and cook until thick and no longer opaque. About 5 minutes.
- Remove from heat, cool slightly, and add strawberries. Stir until covered with strawberry Jello-O sauce.
- Fold into prepared pie crust and spread to the edges as evenly as possible.
- Refrigerate until set (about 2 hours or overnight).
- Serve with whipped cream or whipped topping.
Notes
- My mom’s original recipe calls for 3 cups fruit, but I love it with 4 cups of fruit!
