Made with dark cocoa, coconut oil, a touch of maple syrup, rice crisps and of course smashed candy coated chocolate, this chocolate bark recipe is a healthy-ish alternative to traditional Easter candy.

This recipe is so easy to make! Coconut oil takes seconds to melt in the microwave, and blend with the other ingredients. But you will just have to wait until it’s cooled and firm, which is the hardest part!

Chocolate Bark makes the perfect afternoon pick me up treat and helps curb that chocolate craving. Just keep the serving portion to a small chunk.

After a big Easter brunch or dinner, sometimes a heavy dessert just does not work. So serving a bite sized dessert like this is the perfect way to top off a delicious meal without leaving everyone feel uncomfortably full!

Ingredients to make Easter Dark Chocolate Bark

What Is In Dark Chocolate Bark?

  • COCOA: Cocoa has been proven to have many health benefits. It’s an antioxidant, which may help prevent certain conditions such as heart disease, stroke and even cancer. If you are someone like me, who has Hereditary Hemochromatosis, cocoa can help inhibit the absorption of iron in the body. (Always consult with your doctor regarding dietary requirements for your particular situation.)
  • COCONUT OIL: Coconut oil also has some health benefits when consumed in moderation. It may help curb an appetite and it is also a source of antioxidants. There are also cosmetic uses for coconut oil, try it as a lotion for dry hands, lips and skin.
  • RICE CRISPS: Rice crisps give this tasty treat a delicious crisp texture and also makes it gluten free!
  • A BIT OF SWEET: Maple syrup brings a bit of healthy sweet to the bitter cocoa. And of course the candy coated chocolate is an added and delicious bonus! Use colored candy coated chocolate that matches the holiday! Red and Green M&M’s work great at Christmas, or even orange Reece’s candy’s for Halloween. Use your imagination for a tasty and healthy treat any time of year.

How To Store Chocolate Bark

Since this recipe for chocolate bark contains coconut oil, it will melt or become soft at room temperature (and definitely in your hands!). So keep bark in the refrigerator or the freezer. I prefer to keep it in the freezer for a cold and delicious treat along with my afternoon coffee fix!

Choose to store bark in a container with a tight fitting lid, and even a used margarine container will work! Or use a zippered bag, which also works well.

Chocolate bark will last for a very long time, but long term storage really won’t be an issue – it will be devoured super quickly! But generally speaking, store in the refrigerator for 3 weeks, and the freezer for 3 months.
