Baking brings me such joy! It’s hard to put into words, but I’ll try. When you assemble individual ingredients, then blend them all together to create a completely different and delicious product – well, it’s almost like magic! It is just so satisfying!

How Do You Make Double Chocolate Cookies From Scratch?

It is so easy to make cookies from scratch! And the process is almost identical for each cookie recipe!

  1. Cream together butter, shortening and sugar.
  2. Add the eggs and vanilla, mix to combine.
  3. Add all dry ingredients. It will become quite thick, but mix until everything is evenly combined.
  4. Drop by scoopful onto cookie sheet and bake at 350ËšF for 8 minutes only!
  5. Allow to cool on cookie sheet for 2 minutes, then remove to baking racks to finish.

What Makes A Chewy Cookie?

  • Do Not OverBake! It is the single most important thing you can do to create that deliciously chewy cookie!
  • Dough Consistency! You will want your cookie dough to be quite firm. If it is quite soft, you likely have too much butter and shortening, and this will create a flat cookie. If you find this add flour, a bit at a time, until the dough firms up.

Many people insist that using brown sugar in place of white sugar is the key to a chewy cookie due to its higher moisture content. But I like the crisp outer crust you get using granulated sugar, with the soft, moist chewy center that can be achieved with a shorter bake time.

Cookie Storage!

  • There is nothing better than cookies stored in a cookie jar on the counter! You can store them this way for 2-3 days (if they last that long).
  • Any longer than 3 days, place in an airtight container in the freezer for up to 3 months.
  • To thaw your cookies, you can leave in the container on the counter until they come to room temperature.

But my absolute favorite way to serve cookies from the freezer is to pop them into a toaster oven at 350ËšF for about 3-5 min. They are so delicious, fresh from the oven!

These Double Chocolate Cookies are perfectly moist and chewy everytime!

Ingredients
  

  • 1 cup butter room temperature
  • ¼ cup shortening
  • 1 â…” cup sugar
  • 2 eggs room temperature
  • 2 teaspoon vanilla
  • 2 cups flour
  • ¾ cup cocoa
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups chocolate chips

Instructions
 

  • Preheat oven to 350ËšF.
  • With a mixer, cream together the butter and sugar until light and fluffy.
  • Add eggs and vanilla to butter mixture. Blend well.
  • In a separate bowl, combine flour, cocoa, baking soda and salt.
  • Add flour mixture to butter mixture and mix well. Add chocolate chips.
  • Drop by tablespoon onto cookie sheet.
  • Bake for 8 minutes. Do not overbake!
