These homemade Cosmic brownies have an incredibly fudgy and rich cocoa flavor that is hard to resist. And made with simple ingredients they are so easy!
What Ingredients Do I Need To Make Cosmic Brownies?
There are two parts to this recipe; the fudgy brownie base and the rich ganache topping.
The Fudgy Brownie Base
Cocoa – I like to use Dutch-processed cocoa because it’s so smooth and rich in flavor. But natural cocoa will also work.
Butter – Opt for real unsalted butter, but if all you have on hand is salted butter just leave out the salt called for in the recipe.
Sugar – The mixture of granulated and brown sugar helps to keep these brownies so moist.
All purpose flour – Simple, all purpose flour is all you need. Looking for a gluten free option? Sub in gluten free flour at a 1:1 ratio.
The Chocolate Ganache Topping
Chocolate Chips – Use quality chocolate chips! I love using a combination of dark chocolate and semi sweet chocolate chips if possible.
Cream – Heavy or whipping cream creates a decadent topping.
Coconut Oil – Any oil will do to create a glossy finish.
How To Make Cosmic Brownies Recipe
- Preheat oven, line baking pan with parchment paper.
- Whisk butter and sugars, add eggs and vanilla, stir to combine. Fold in flour, cocoa powder, cornstarch and salt.
- Turn the batter into pan, and spread to edges evenly.
- Bake as directed in the recipe. Cool.
- Using the microwave, heat chocolate chips and cream until melted and smooth. Add oil.
- Pour ganache over cooled brownie base. Top as desired.
Tips For The Best Brownies!
- Use parchment paper to line the baking pan for easy removal and slicing.
- Try adding in your favorite mix in’s for fun variety! Different chocolate chip flavors, a peanut butter or cream cheese swirl, or coconut flakes are all great ideas.
- The secret to the best brownies is to never over bake them!
- Use a hot knife to slice Cosmic brownies and clean in between slices for best presentation.
Serving And Storing Cosmic Brownies
Serve these brownies in bite sized pieces for simple dessert tray treats. Slice a bit larger for a decadent after dinner dessert. Or freeze slightly, chop up and top an ice cream sundae. Don’t forget a drizzle of chocolate topping and some whipped cream!
Place sliced brownies in an airtight container and separate layers with parchment paper so they do not stick together. Brownies can be stored at room temperature for 2-3 days, or refrigerated for up to a week.
Cosmic brownies freeze well! Store similar to above, separated by parchment paper. Or freeze in a single layer, then move to a container once frozen. Thaw in the refrigerator or room temperature in a single layer.

Cosmic Brownies Recipe
Equipment

Ingredients
- ½ cup butter
- ½ cup sugar
- ½ cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- ¾ cup flour
- ⅔ cup cocoa
- 1 teaspoon cornstarch
- ¼ teaspoon salt
Ganache Frosting
- ½ cup heavy cream
- 1 cup chocolate chips
- 1 teaspoon coconut oil
Instructions
- Preheat oven to 350˚F. Grease and line a 8×8 inch baking pan with parchment paper.
- In a mixing bowl, whisk together the melted butter and sugars. Add the eggs and vanilla and mix well to combine.
- Stir in the flour, cocoa, cornstarch and salt. Mix until no clumps remain. Drop the batter the batter into pan and spread to the edges evenly.
- Bake for 20-25 minutes or until a toothpick comes out mostly clean. Cool on rack.
Ganache Frosting
- In a microwave safe bowl, add chocolate chips and cream. Heat for two 30 second intervals, stirring in between each. Then if needed, two more 20 second intervals, until chocolate is melted. Heat only until chocolate is just melted, don't overheat. Add coconut oil and mix.
- Pour over cooled brownies, cover with plastic wrap and set for 5 minutes. Sprinkle with candies and refrigerate 30 minutes. Remove from pan to slice.
