Ingredients and Variations
Filling – Base, Chicken, and Cheese
The creamy base filling is made with a blend of cream cheese, dry ranch seasoning mix and zesty Frank’s Red Hot sauce. Modify the amount of hot sauce to match your taste, and use creamy ranch dressing if the dry mix is not available.
Previously cooked chicken breasts, grilled or poached, will work in this recipe. Or use a combination of breast and thigh meat if needed, just be sure it is tender and juicy. Using the meat from a rotisserie chicken is super convenient. Canned chicken is an option too!
I used cheddar cheese for this recipe, but mozzarella, marble or Monterey Jack will work equally well. Or choose a store bought Mexican cheese blend for added convenience.
For variation, add chopped green onion and finely diced celery to the buffalo chicken filling.
Flour Tortillas
I highly recommend using flour tortillas for this recipe as they have better stretch when rolling as opposed to corn tortillas. Lay them out at room temperature so they are easier to roll, or pop it in the microwave for a few seconds. Use spinach, cheese or sun dried tomato tortillas for unique presentation. Corn tortillas can work, but be careful to avoid cracking when rolling up.

Making Buffalo Chicken Pinwheels
- Mix together the softened cream cheese, ranch powder and hot sauce with a hand mixer.
- Fold in the chicken and cheese.
- Spread â…“ of the mixture over each large tortilla.
- Roll up and wrap in plastic wrap.
- Refrigerate for 1 hour.
- Unwrap, and slice.
- Serve with blue cheese dip.
Recipe Tips
Use softened cream cheese. Either leave out at room temperature for about 1 hour, or heat in the microwave at 15 second intervals until just soft.
Don’t skip refrigeration! This makes the pinwheels so much easier to slice.
Be sure to use a sharp knife to slice the chilled pinwheels, and wipe the knife clean between cuts to ensure clean, even slices.
If you don’t want to serve pinwheels with dip but still want that blue cheese flavor, sprinkle some blue cheese crumbles on the filling prior to rolling up!
Serving and Storing Buffalo Chicken Pinwheels
These tasty treats are perfect for party planning because they really should be made ahead of time! Store in the refrigerator, then slice and place on party platters just before guests arrive.
Stick each pinwheel with a toothpick for easier serving. Serve with crisp tortillas and salsa along with some veggies and dip.

Buffalo Chicken Pinwheels
Equipment
- Medium mixing bowl

- Plastic wrap
Ingredients
- 4 ounces cream cheese, softened
- â…“ cup buffalo sauce, more or less as desired
- 1 Tablespoon ranch dressing mix
- 1 cup finely shredded cheddar cheese, marble or mozzarella
- 1 ½ cups finely chopped chicken, or shredded chicken
- 3 large flour tortillas, burrito size
Blue Cheese Dip (optional)
- ½ cup blue cheese crumbles
- ¼ cup mayonnaise
- ¼ cup sour cream
- ½ Tablespoon lemon juice
Instructions
- In a medium bowl, combine softened cream cheese and ranch powder. Mix with a hand mixer until smooth. Add hot sauce and mix by hand until slightly incorporated, then use a hand mixter until creamy smooth.
- Add the shredded chicken, mix once more. Then fold in the cheese until fully incorporated.
- Spread â…“ of the mixture over each large tortilla.
- Roll the tortilla firmly, but not so tight the filling squishes out.
- Wrap each roll in plastic wrap and refrigerate for 1 hour.
- Unwrap, and slice about ½ inch wide and place on a platter.
Blue Cheese Dip
- In a small bowl, mix together the blue cheese crumbles, mayonnaise, sour cream and lemon juice.
- Serve in a small dipping bowl with the pinwheels.
Notes
- Microwave cream cheese for 2-3, 15 second intervals before mixing.
- Use 3 large, burrito sized, flour tortillas (10 inch diameter), or use 6 small tortillas (7 inch diameter).
