These amazing Blueberry Bran Muffins have everything you want in a muffin! Both fruit and fibre are found in these moist and delicious muffins. So tasty while being good for you as well.

What is Wheat Bran?

Wheat Bran is the outer layer of the wheat kernel that has been separated during the milling process. It is high in fibre and promotes healthy bacteria in the stomach.

According to Healthline, a 1/2 cup of wheat bran contains about 12 grams of fibre! It is super to add to breads, muffins and even cookies!

How to make Blueberry Bran Muffins

  • Add boiling water to bran and soak bran for about 5-10 minutes. This gives the bran time to soften.
  • In a medium bowl, combine dry ingredients and add blueberries.
  • Sour the milk or cream by adding 1 teaspoon vinegar to a liquid measuring cup and add liquid to fill to the 1 cup line.
  • Add the liquid, oil and beaten egg to the soaked bran and mix.
  • Make a well in the dry ingredients and add the wet mixture. Stir only to combine.
  • Drop using a 1/3 cup measuring cup to either a greased or parchment lined muffin tin. Ensure each muffin tin has an equal amount of batter to ensure even baking.
  • Bake for 20 minutes, remove and cool on baking rack.

Why is it important to allow the natural bran to soak?

It is a good idea to soak the bran before adding to your muffins because it adds moisture and softens the bran, making it much more enjoyable.

How should you store wheat bran?

You can store bran in an airtight container but if not used in a long while, it may become rancid. I like to store my bran in the freezer.

Can you freeze Blueberry Bran Muffins?

Absolutely! I love to make a batch of these and pop them in the freezer (if any are left!) Wrap in plastic wrap and place in a zippered bag for a quick grab and go breakfast or snack.

Blueberry Bran Muffins are a delicious and easy to make muffin, perfect enjoyed at breakfast or as a snack! 

Ingredients
  

  • 1 ½ cups bran
  • 1 cup boiling water
  • 1 ½ cup flour
  • ½ cup brown sugar
  • ¼ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup frozen blueberries
  • 1 cup sour milk or cream
  • ¼ cup oil
  • 1 egg beaten

Instructions
 

  • In a small bowl pour boiling water over bran to soften.  
  • Preheat oven to 375ËšF and grease or line muffin tins with parchment cups.
  • Combine flour, brown sugar, salt, baking soda and baking powder. Stir well. Add frozen blueberries.
  • To sour milk, add 1 teaspoon vinegar to a 1 cup liquid measuring cup. Fill to the 1 cup line with cream or milk.
  • Pour sour milk and oil into the softened bran. Add egg and mix well.
  • Add liquid mixture to dry mixture. Stir just to combine.
  • Using a 1/3 cup measuring cup, fill parchment cups with batter.
  • Bake for 20 minutes. Cool on baking rack.
