Avocado Deviled Eggs Recipe

Ingredients
  

  • 6 hard boiled eggs
  • 1 ripe avocado
  • 2 Tablespoons greek yogurt or sour cream
  • ½ lime juiced
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • chopped parsley for garnish
  • bacon bits for garnish

Instructions
 

  • Cut hard boiled eggs in half. Pop out the egg yolks and place in a small bowl. Place empty egg whites on a serving dish or plate.
  • Mash yolks with a fork until they are a fine crumble.
  • In another small bowl, mash avocado with a fork until smooth. Add lime juice, smoked paprika, salt and pepper. Add greek yogurt and egg yolks, stir until it becomes a smooth consistency.
  • Place a sandwich bag in a small glass and wrap the bag around the edges of the glass. Fill the bag with the egg filling mixture.
  • Remove bag from glass and snip off one corner to create a piping bag.
  • Fill each egg white with the filling, making sure to pile each high.
  • Garnish with a sprinkle of parsley, smoked paprika (if desired) and bacon bits.
