Make avocado deviled eggs for a creamy and delicious twist on a classic appetizer!
Equipment
- small bowl
Ingredients
- 6 hard boiled eggs
- 1 ripe avocado
- 2 Tablespoons greek yogurt or sour cream
- ½ lime juiced
- ¼ teaspoon smoked paprika
- ¼ teaspoon salt
- ¼ teaspoon pepper
- chopped parsley for garnish
- bacon bits for garnish
Instructions
- Cut hard boiled eggs in half. Pop out the egg yolks and place in a small bowl. Place empty egg whites on a serving dish or plate.
- Mash yolks with a fork until they are a fine crumble.
- In another small bowl, mash avocado with a fork until smooth. Add lime juice, smoked paprika, salt and pepper. Add greek yogurt and egg yolks, stir until it becomes a smooth consistency.
- Place a sandwich bag in a small glass and wrap the bag around the edges of the glass. Fill the bag with the egg filling mixture.
- Remove bag from glass and snip off one corner to create a piping bag.
- Fill each egg white with the filling, making sure to pile each high.
- Garnish with a sprinkle of parsley, smoked paprika (if desired) and bacon bits.
