Ingredients

  • pounds ground beef
  • 1 teaspoon butter or olive oil
  • 1 medium onion chopped
  • 2 garlic cloves minced
  • 2 cans tomato sauce
  • 1 can tomato paste
  • 1 can black beans drained and rinsed
  • 1 can corn niblets drained, or 1 cup frozen
  • 1 can green chiles 4 ounce can
  • 2 Tablespoons chili powder
  • 1 Tablespoon cumin
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • 1 teaspoon fresh ground pepper
  • salt to taste

Instructions

  • In a skillet, brown ground beef. Place in the bottom of slow cooker. Add 1 teaspoon butter to skillet and saute onion until soft, add garlic and cook for 30 seconds. Add to beef.
  • Add the tomato sauce, tomato paste, beans, corn, green chilis, and seasonings to the slow cooker. Mix.
  • Cook with lid on low for 6-8 hours or for 4-5 hours on high.
  • Serve with toppings such as diced jalapenos, shredded cheese, salsa, sour cream, avocado and green onions.

Notes

  • Sauté the onions and garlic before adding to the crockpot to make the chili taste even better!
  • Cook the chili for as long as possible for the best flavor.
  • Batch cook this recipe as it tastes even better the next day!
