- 1½ pounds ground beef
- 1 teaspoon butter or olive oil
- 1 medium onion chopped
- 2 garlic cloves minced
- 2 cans tomato sauce
- 1 can tomato paste
- 1 can black beans drained and rinsed
- 1 can corn niblets drained, or 1 cup frozen
- 1 can green chiles 4 ounce can
- 2 Tablespoons chili powder
- 1 Tablespoon cumin
- ½ teaspoon onion powder
- ½ teaspoon paprika
- 1 teaspoon fresh ground pepper
- salt to taste
In a skillet, brown ground beef. Place in the bottom of slow cooker. Add 1 teaspoon butter to skillet and saute onion until soft, add garlic and cook for 30 seconds. Add to beef.
Add the tomato sauce, tomato paste, beans, corn, green chilis, and seasonings to the slow cooker. Mix.
Cook with lid on low for 6-8 hours or for 4-5 hours on high.
Serve with toppings such as diced jalapenos, shredded cheese, salsa, sour cream, avocado and green onions.
- Sauté the onions and garlic before adding to the crockpot to make the chili taste even better!
- Cook the chili for as long as possible for the best flavor.
- Batch cook this recipe as it tastes even better the next day!
