Tomato Mozzarella Basil Skewers

Ingredients

  • 24 grape tomatoes
  • 24 mini mozza cheese balls
  • fresh basil rinsed and trimmed to bite size pieces
  • salt and pepper optional, to taste
  • ½ cup balsamic vinegar

Instructions

  • Bring balsamic vinegar just to a boil, reduce heat to a simmer for about 10 minutes until reduced slightly. Set aside and cool.
  • Cut each tomato in half. Skewer in the following order:
    tomato half
    basil
    mozza ball
    basil
    tomato half
  • Serve with balsamic as a dip, or drizzle skewers with balsamic.
  • Optional: Omit the balsamic and serve with just a dusting of salt and pepper.
