Chocolate Covered Peanut Butter Balls

Ingredients

  • 1 cup peanut butter
  • ½ cup butter
  • cup graham cracker crumbs or chocolate cracker crumbs
  • cups Rice Krispies
  • 1 cup powdered sugar
  • 12 ounces dark chocolate
  • 1 Tablespoon oil or shortening

Instructions

  • Line a baking sheet with parchment paper.
  • Blend peanut butter and butter with mixer. Add cracker crumbs, Rice Krispies and powdered sugar.
  • Using a cookie scoop, drop balls onto parchment lined baking sheet. Freeze for at least 15 min. Remove from freezer, and using your hands working quickly, form into tight balls. Place back in freezer.
  • Melt chocolate and oil together in the microwave on 50% power for 30 second intervals until just melted.
  • Dip balls in chocolate, set on parchment lined sheet.

Optional:

  • Drizzle with chocolate, melted peanut butter chips, coconut, crushed candy, etc.

Notes

  • Chill the peanut butter balls before rolling into balls and covering with chocolate.
  • Use parchment for easy clean up.
  • Chocolate chips can be microwaved at 50% power for 30 second intervals to make the drizzle. Snip a corner of the bag for an instant piping bag!
  • Use tasty toppings like crushed M&M's, flaked coconut, or cookie crumbs on balls.
