- 3 medium mashed bananas
- ¾ cup brown sugar
- ½ cup mayo
- 1 egg
- ¼ cup butter melted and cooled
- 1 teaspoon vanilla
- 1 cup flour
- ½ cup cocoa
- ½ teaspoon salt
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ cup chocolate chips
- ⅓ cup pecans or walnuts
Preheat oven to 350˚F. Line a 9x5 inch loaf pan with parchment paper and spray with cooking spray.
Mash ripe bananas. Add brown sugar, mayonnaise, eggs, melted butter and vanilla. Blend together well. You can use a mixer for this.
Add flour, cocoa, salt, baking powder, baking soda, chocolate chips and nuts to wet ingredients. Mix with a rubber scraper until moistened. Pour into prepared pan.
Bake for 45-50 minutes or until a toothpick comes out clean.
Allow to cool at least 15 minutes before removing from pan.
