Ingredients

  • 3 medium mashed bananas
  • ¾ cup brown sugar
  • ½ cup mayo
  • 1 egg
  • ¼ cup butter melted and cooled
  • 1 teaspoon vanilla
  • 1 cup flour
  • ½ cup cocoa
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ cup chocolate chips
  • cup pecans or walnuts

Instructions

  • Preheat oven to 350˚F. Line a 9x5 inch loaf pan with parchment paper and spray with cooking spray.
  • Mash ripe bananas. Add brown sugar, mayonnaise, eggs, melted butter and vanilla. Blend together well. You can use a mixer for this.
  • Add flour, cocoa, salt, baking powder, baking soda, chocolate chips and nuts to wet ingredients. Mix with a rubber scraper until moistened. Pour into prepared pan.
  • Bake for 45-50 minutes or until a toothpick comes out clean.
  • Allow to cool at least 15 minutes before removing from pan.
