Rocky Road Dip

Rocky Road Dip is a creamy, nutty dip that is perfect as a snack or a dessert! Cream cheese, peanut butter, yogurt, marshmallows, nuts and chocolate chips are blended together and, paired with your favorite dippers, will definitely be a hit at your house!

Holiday season is upon us which often means house guests. When we have guests in my home, they usually stay for several days. So I like to keep quick and easy breakfast ideas like Healthy Breakfast Cookies,  Festive French Toast Bake, or Banana Loaf on hand so I can enjoy visiting instead of preparing food all the time.

That is one of the reasons I love this Rocky Road Dip! Not only because it is so delicious, but I can make it ahead of time and bring it out either as an easy snack that will satisfy hungry guests waiting for holiday dinner or serve it as a light dessert post dinner!

What Is In Rocky Road Dip?

The ingredients for this dip are ones you likely already have on hand in your fridge and pantry.

  • Cream Cheese
  • Peanut Butter
  • Plain Yogurt (or greek yogurt)
  • Powdered Sugar
  • Pecans
  • Mini Marshmallows
  • Mini Chocolate Chips

Let’s Make It!

  1. Soften cream cheese. Add peanut butter, yogurt, vanilla and blend till smooth.
  2. Fold in nuts, chocolate chips and marshmallows.
  3. Serve immediately or you can refrigerate for later.

What Dippers To Use?

I love to use mini pretzels, or thin pretzels, but you can use Nilla wafers, vanilla or chocolate cookies, graham crackers, bread sticks, or your favorite cracker. Bananas would be delicious dipped in this as well!

Use your imagination, but I personally love the sweet and salty combination of a cracker or pretzel mixed with the flavors in the dip!

If you prefer a nut free snack, simply omit the nuts and the peanut butter, and use only 1/2 cup powdered sugar. It will be delicious even without the nuts!

I love peans in this recipe, but walnuts would also be delicious. If you can purchase tiny mini marshmallows, they work very well. But if you cannot find them, do as I did and cut the mini marshmallows into quarters.

Ingredients
  

  • 4 oz cream cheese
  • ¼ cup peanut butter
  • ¾ cup plain yogurt or greek yogurt
  • 1 teaspoon vanilla
  • â…” cup powdered sugar
  • ½ cup mini marshmallows cut up
  • 1 cup mini chocolate chips
  • â…“ cup pecans

Instructions
 

  • With a mixer, blend the cream cheese, peanut butter, greek yogurt and vanilla till creamy.
  • Add powdered sugar and blend.
  • Fold in mini marshmallows, mini chocolate chips and pecans.
  • Turn out into a serving dish and refrigerate until ready to serve.
  • Serve with fruit, Nilla wafers or pretzels.
