Ingredients and Substitutions
PANCAKE MIX – this versatile mix contains dry ingredients needed to make muffins, in one simple mix! And using a mix like Kodiak pancake mix, adds a bit of protein as well. So these muffins are a hearty and filling way to start the day!
BUTTERMILK – for moist and delicious muffins, this is the best ingredient. And if buttermilk is not available, simply make some from scratch. For every 1 cup milk, add 1 Tablespoon vinegar or lemon juice. Allow mixture to stand for about 5 minutes before using. Or use cream in place of milk, for even more moist and delicious muffins!
PEANUT BUTTER – both smooth or crunchy peanut butter works in this recipe. Or try other nut butters for variation!
BANANAS – what a great way to use up ripe bananas! But if bananas are not available, or not preferred, simply replace with unsweetened apple sauce or pumpkin puree.
A SWEET TOUCH – with only 1/4 cup brown sugar, this recipe is not too sweet. Use white sugar if brown sugar is not available. Chocolate chips are added, but can be omitted if desired. Try adding chopped dried fruit, raisins, or nuts in place of the chips!

Don’t overload the muffin with add in’s. While it may be tempting, the structural integrity of the muffin can be compromised when too much is added. So keep any combination of nuts, raisins, chocolate chips – or all three add-in’s, to less than 1 cup for this recipe.

Pancake Mix Muffins
Equipment
- mixing bowl
- muffin pan
Ingredients
- 2 ripe bananas about 1 cup
- ½ cup peanut butter
- 1 egg
- ¼ cup brown sugar
- 1 teaspoon cinnamon
- 1 cup buttermilk or 1 cup milk + 1 Tablespoon lemon juice or vinegar
- 2 cup Kodiak pancake mix
- ½ cup chocolate chips
Instructions
- Mash ripe bananas with the back of a fork, or using a potato masher.
- Add peanut butter, egg and brown sugar. Mix well to combine.
- Blend in cinnamon and buttermilk.
- Add Kodiak pancake mix and chocolate chips, mix just to combine. Don't over mix.
- Evenly distribute batter into muffin tin.
- Bake in a 350ËšF oven for 22-25 minutes, or until slightly brown and a toothpick comes out clean.
