What Are Lofthouse Cookies?

These Lofthouse style cookies are shaped and sized like a cookie, but when you bite into them they are soft, light and have an almost cake like consistency. They are the perfectly sized bite of cake in cookie form!

Lofthouse Cookies Ingredients

This cookie recipe uses ingredients you likely already have on hand.

  • PANTRY INGREDIENTS – You will need flour, sugar, cornstarch, baking powder, baking soda, cream of tartar and vanilla (and almond flavoring if you have it). For the frosting you will also need powdered sugar.
  • REFRIGERATED INGREDIENTS – An egg, butter and Greek Yogurt are needed for the cookie dough. If you do not have Greek yogurt, you can use sour cream or even buttermilk as a substitute. You will also need cream (or milk) for the frosting.

How To Make Lofthouse Cookies

Follow these easy directions to learn how to make DIY Lofthouse Cookies!

  1. Cream sugar and butter together. Add egg, yogurt and flavorings.
  2. Combine all dry ingredients. Add dry ingredients into wet and blend until creamy.
  3. Cover with plastic wrap and freeze for 20 – 30 minutes, or until slightly firm.
  4. Drop by large tablespoon onto parchment lined baking sheet. Roll each ball tightly.
  5. Flour the bottom of a ramekin and use it to press each ball to about 1/4 inch thickness.
  6. Bake for 9-11 minutes, or until just lightly browned and the cookie bounces back when pressed lightly with your finger.

Homemade Frosting Recipe

Cream together butter and vanilla, then add powdered sugar gradually. Once incorporated add cream and blend on high speed until light and creamy. Add desired coloring. I love Wilton’s products for coloring any and all frosting!

This frosting recipe will make enough for 12 cookies. Double the recipe if you want more! Frosting can be refrigerated, in an airtight container, for up to 2 weeks. Bring to room temperature and whip again to bring it back to a light and spreadable texture.

These soft Lofthouse cookies are so light and delicious, and are really perfect for all occasions! Wrap up a bunch to give as a hostess gift or just to simply brighten someone’s day! They are also perfect to bring to a potluck or school bake sale because they can be made peanut free (omit the almond flavoring if you plan to do this).

Lofthouse Frosted Cookies

Easy to make soft Lofthouse cookies are perfect for afternoon tea, or to take to a school bake sale or potluck.

Equipment

  • hand mixer

Ingredients
  

  • ½ cup sugar
  • cup butter salted
  • 1 egg
  • ¼ cup greek yogurt
  • 1 tsp vanilla
  • ¼ tsp almond flavour
  • 1 ½ cup flour sifted
  • 2 tbsp cornstarch
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp cream of tartar

Frosting

  • ¼ cup butter
  • 1 cups powdered sugar ¼ cup powdered sugar if needed
  • ½ teaspoon vanilla
  • 1 tablespoon cream , or milk

Instructions
 

  • Cream sugar and butter together. Add eggs, yogurt, vanilla and almond flavoring and blend well.
  • Combine remaining ingredients in a bowl and stir.
  • Add dry ingredients to wet ingredients. Mix until blended and creamy.
  • Cover bowl with plastic wrap and freeze for 20-30 minutes until slightly firm.
  • Drop by large tablespoon onto a parchment lined cookie sheet. Roll each cookie until compact and smooth.
  • Preheat oven to 350˚F
  • Flour the bottom of a cup or ramekin and press each cookie flat. Cookies should be about ¼" thick.
  • Bake for 9-11 minutes. Check often until lightly brown on the edges and the cookie bounces back when pressed.

Frosting

  • Cream together butter and powdered sugar.
  • Add vanilla and slowly add cream. Whip with hand mixer until creamy and fluffy.
