This is hands down the easiest recipe to make, and is so addictive! Graham crackers are smothered with a homemade butter toffee, then layered with nuts, chocolate and toppings of choice.
Pretzel sticks are my personal favorite topping – I love the combination of sweet and salty!

Christmas Crack!
Different versions of this Graham Cracker Toffee Bars recipe have also been referred to as Christmas Crack. I am not certain if it’s because those versions are generally made with saltine crackers? Or if it’s just because they are so addicting?
Either way, you are going to love this super easy and versatile recipe. Decorate with toppings that your family loves, or that fit the season. It’s definitely a recipe that will be a family favorite for years to come!
Graham Toffee Ingredients
- This recipes uses graham crackers but feel free to sub soup crackers in place of graham crackers if desired, they will work perfectly.
- The toffee is made simply with brown sugar and butter. The secret is in the timing and temperature of the toffee for the perfectly chewy texture!
- Pecans are always a favorite, but coarsely chopped walnuts, or even almonds would be delicious!
- Use any type of chocolate you like – my favorite for this is dark chocolate chips. White, milk or semi-sweet chocolate chips will also work well, or mix up a unique combination of them all!
- Use any toppings that your family will like. I used M&M’s and pretzel sticks. To be honest, I prefer the pretzel sticks – I love the sweet and salty combination! But use sliced almonds, shredded coconut, toffee bits, chopped candy canes or just drizzle with a different color of chocolate. This is perfect to match different holidays during the year – use an orange melting chocolate drizzled over pretzel sticks for Halloween!
How Do I Make Graham Toffee Bars?
- Line pan with foil and grease lightly.
- Arrange graham crackers on bottom of pan.
- Make the toffee layer by melting the butter and brown sugar together. Cook according to the recipe.
- Pour toffee over graham crackers, and bake.
- Remove from oven, sprinkle chocolate chips on and return to oven for 1 minute only.
- Spread chocolate with a spatula, then sprinkle with toppings of choice.
- Cool on rack, then refrigerate.
Handy Tips!
- Use an 11×15 inch pan, the layers of toffee and chocolate will not be as thick, but it will be just as delicious!
- Spray foil with baking spray which is so quick and easy! Or use parchment paper.
- Once refrigerated allow bars to sit at room temperature for about 30 minutes before trying to slice.
- Remove entire bar from pan, remove foil (or parchment), place on a cutting board and slice with a sharp knife.
- Store bars in an airtight container in the refrigerator for about 1 week, or in the freezer for 2-3 months. Re-use an 4 litre ice cream pail to store treats – it’s super easy and a great way to reuse those types of containers.

Graham Cracker Toffee Bars
Ingredients
- 1 package graham crackers or as many as you need
- 14 ounce dark chocolate chips or semi-sweet, milk, or white chocolate chips, about 2 cups
- 1 cup butter
- 1 cup brown sugar light
- 1 cup pecans coarsely chopped
- toppings m & m's, nuts, toffee bits, pretzels, toasted coconut – optional
Instructions
- Preheat oven to 350ËšF. Line 9×13 pan with foil and spray with baking spray.
- Line bottom of pan with graham crackers. You may have to break them in order to fit.
- Melt butter and brown sugar together. Bring to boil, and cook for 2-3 minutes. (It's helpful to use a thermometer – the mixture should get to a temp between 270ËšF -290ËšF)
- Pour over graham crumbs. Bake 7 min.
- Remove from oven, sprinkle chocolate chips – bake 1 minute to melt.
- Remove from oven, smooth out chocolate and sprinkle with desired toppings.
- Cool at room temperature, then transfer to refrigerator to harden (about 30 minutes)
- Remove from pan and peel away foil (or parchment). Place on cutting board and slice.
