Easy Whipped Shortbread Cookies

These Easy Whipped Shortbread Cookies are quite simply that – easy! It takes only minutes to gather the ingredients and with a stand mixer doing all the work, they are ready to drop onto pans in just 15 minutes! 

Out of all the recipes I have tried, this whipped shortbread recipe is the lightest and most delicious! Not too sweet, it just melts in your mouth! Perfect for the holidays, these cookies are great to add to your festive platter or to wrap up as a special hostess gift.

This recipe is handed down to me from my mom. We compared notes the other day and, while we both had other shortbread recipes in our recipe books, this one was marked as each’s favorite. They are so light and fluffy, with just enough sweetness to make you want another…and another…

I have another shortbread recipe that you need to roll out and use cookie cutters for cute little shapes. That recipe is also delicious, but when I am in a hurry, this whipped shortbread recipe is my go to!

The holidays are so busy as it is, that I love to make recipes that are simple, no fuss but still are delicious. My Butter Tart Bars are another great recipe if you are in a time crunch, but don’t want to sacrifice taste!

How to Make Whipped Shortbread

Learning how to make whipped shortbread is super easy!

  • First assemble all your ingredients and preheat your oven to 325ËšF.
  • Using a hand mixer or preferably a stand mixer, beat the butter and icing sugar together well. Turn the speed to medium-low, add the vanilla and then the cornstarch. Finally, and gradually, add in the flour.
  • Once this is incorporated, turn up the speed to medium-high and whip for about 10 minutes. You likely will need to scrape down the sides every once in a while, but continue to whip it. You will see the color transform from butter yellow to a nice white color. The photo below gives a good indication what it should look like. At this point you know you are ready.

  • With a cookie dough scoop, drop the whipped shortbread onto a baking sheet.
  • Flatten with a fork that has been dipped in either flour or icing sugar so that it will not stick as you go from one cookie to the next.

  • Bake in a 325ËšF oven for 10-12 minutes. Really watch the time because oven temperature can vary and you do not want to brown the bottoms too much. The shortbread should be a light and creamy color.
  • Take out and immediately sprinkle decorator sugar or colored sugar on each cookie. Cool cookies slightly on the pan for about 2 minutes before removing them to a cooling rack.

Can I Double the Batch of Whipped Shortbread?

While I usually do double many of my recipes, this one I would caution against it. If you choose to do so, be sure you have a powerful mixer and a bit more time. It definitely takes a little longer to achieve that nice white whipped color when you double this recipe.

Easy Whipped Shortbread Cookies

These Easy Whipped Shortbread Cookies are light, fluffy and literally melt in your mouth.

Ingredients
  

  • 1 cup butter
  • ½ cup powdered sugar
  • 2 teaspoons vanilla
  • ¼ cup cornstarch
  • 1 ½ cup flour

Instructions
 

  • Preheat oven to 325ËšF.
  • On low speed, mix together butter and powdered sugar and vanilla till combined.
  • Gradually add flour and cornstarch. Turn mixer to medium high and whip until very fluffy.
  • Using a cookie scoop or by teaspoon, drop onto cookie sheets.
  • Flatten with a fork dipped in icing sugar and bake for 12-13 minutes. Remove before they turn brown on the bottom

Notes

  • Use colored sugar to decorate, or maraschino cherries cut in half would be lovely as well.
  • Work with butter that is at room temperature for easier blending.
