Cracker Crumbs: Adding graham cracker crumbs helps these balls stick together and maintain their structure. Plus it tastes great. Use ground oatmeal in place or even chocolate cracker crumbs in a pinch.

Rice Krispies: And adding Rice Krispies gives the perfect amount of crispy crunch with every bite. Sub in crushed up Crispix cereal or for a different texture, crushed corn flakes.

Instructions

  1. Blend butter and peanut butter. Mix in crumbs, Rice Krispies and powdered sugar.
  2. Drop balls onto parchment. Freeze. Form into tight balls. Place balls back in freezer.
  3. Melt chocolate and oil.
  4. Dip balls in chocolate, set on parchment lined sheet.

Chocolate Covered Peanut Butter Balls

These peanut butter balls covered with chocolate are so easy to make, and super delish!

Equipment

  • baking sheet
  • hand mixer
  • cookie scoop

Ingredients
  

  • 1 cup peanut butter
  • ½ cup butter
  • 1½ cup graham cracker crumbs or chocolate cracker crumbs
  • 1½ cups Rice Krispies
  • 1 cup powdered sugar
  • 12 ounces dark chocolate
  • 1 Tablespoon oil or shortening

Instructions
 

  • Line a baking sheet with parchment paper.
  • Blend peanut butter and butter with mixer. Add cracker crumbs, Rice Krispies and powdered sugar.
  • Using a cookie scoop, drop balls onto parchment lined baking sheet. Freeze for at least 15 min. Remove from freezer, and using your hands working quickly, form into tight balls. Place back in freezer.
  • Melt chocolate and oil together in the microwave on 50% power for 30 second intervals until just melted.
  • Dip balls in chocolate, set on parchment lined sheet.

Optional:

  • Drizzle with chocolate, melted peanut butter chips, coconut, crushed candy, etc.
