For as long as I can remember, my kids have loved chocolate chip banana nut muffins! So I double the batch whenever possible because they are gone super fast! They make a great after school snack or a breakfast treat!
Banana Chocolate Chip Muffin Ingredients
Bananas – Use very ripe bananas becuase they are easy to mash, and they become more sweet.
Pantry Staples – All purpose flour, baking powder, baking soda, and sugar are all common muffin ingredients.
Dairy – Use eggs and butter that are at room temperature if possible.
Apple Sauce – For added moisture and flavor with less fat, I add some unsweetened apple sauce! The muffins are a bit more dense, but are still delicious. Once the jar is opened, refrigerate and use in furture recipes.
Add Ins – Chocolate chips and chopped walnuts are the perfect additions to these muffins. But you can make them without any add-ins at all if you wish. Or try other ideas such as raisins or other dried fruit, or some flaked coconut.
How to Make Banana Nut Muffins
- Assemble all your ingredients before you begin, just to make sure you have everything!
- Mash ripe bananas, add all remaining ingredients except the melted butter and mix. The batter will be lumpy.
- Add the melted butter and stir just to combine. It will still be thick but that is ok.
- Evenly distribute batter in muffin tins and bake (refer to recipe below)
- Cool and enjoy!
Tips for Great Muffins Every time!
- Use ripe bananas! They are easier to mash and have a sweeter flavor.
- Don’t scoop the flour. Instead pour it into your measuring cup and level it off with a straight edge.
- Do not over mix the batter. Over-mixing can produce a tougher muffin.
- Use a measuring cup to scoop the batter for even distribution and a more consistent baked result. Using a ¼ cup, which when filled, is almost the perfect amount for 12 muffins.
- Do not over bake! Check 5 minutes before bake time indicated, then check at 2 minute intervals after that. If a toothpick inserted comes out clean, they are done!
- Cool on a rack for about 5 minutes in the muffin pan. Using a fork to loosen each muffin, remove them and cool completely on the rack.
Can you Freeze Banana Nut Muffins?
These Chocolate Chip Banana Nut Muffins freeze incredibly well. I love to make a double batch to keep a few on hand to pop quickly in the microwave in the morning, or with my afternoon coffee!
They are super portable too. Pre-wrap them individually in plastic wrap, to pop them into kid’s lunch kits or grab on the way to after school events.
I really hope you will have success with this banana nut muffin recipe! It really is one of my favorite no-fuss recipes and my family asks for them all the time!
