Blueberry Cream Cheese French Toast Casserole
I love this recipe because it can be make on the spot, or assembled the night before and refrigerated. Either way, this is a yummy way for everyone to wake up!
Even the most novice baker or cook will love this recipe because it is so easy to follow and simple to make!
Mix the ingredients together and pop it in the oven – its that easy! There’s plenty of time to make other brunch dishes, or simply take some time for yourself!
What Goes In A French Toast Casserole?
- Bread – while this recipe calls for thick cut, Texas style bread, any bread will work. If it is quite a bit more dense, such as a ciabatta, brioche or even sourdough, add 1/4 cup additional milk to the recipe.
- Dairy Ingredients:
- Eggs: I use large eggs for this recipe. Brown, white, speckled? Your choice!
- Milk: 1% milk is a staple in our house and what I used in this recipe, but any milk will be fine. I also love to use Egg Nog to make a Festive French Toast Bake – it’s perfect for the holidays, and a great way to use up any leftover egg nog.
- Cream: Use whipping cream or heavy coffee cream. 18% or higher is best.
- Cream Cheese: Light or full fat cream cheese is used but mascarpone cheese would be delicious.
- Sweet & Spicy Flavors:
- Brown Sugar: I use light brown sugar in this recipe, but dark brown sugar would be delicious and will work well.
- Experiment with Spices! While I love cinnamon and it’s so delicious, try adding a bit of nutmeg or even allspice (Caution: just use a fraction of allspice if using). Instant espresso is another interesting option, or even cocoa.
- Fruit – Fresh or frozen blueberries? Either works and taste delicious. Try adding an assortment of berries for a fruit filled french toast.
French Toast Casserole Topping!
This blueberry french toast casserole includes a delicious topping make of brown sugar, flour, cinnamon and butter. It’s super easy to make and is perfect on top of the casserole.
Easy To Make Blueberry French Toast Casserole!
- Cut bread into cubes.
- Combine all ingredients (except topping ingredients) and toss with bread to coat.
- Fold into a 9×13″ greased baking dish. Sprinkle berries and cubed cream cheese over top.
- Assemble topping ingredients, and spread evenly over entire casserole.
- Bake at 350˚F covered with foil for 30 minutes, then remove foil for the remaining bake time.
Serving Suggestions
I love to serve this with pure maple syrup, but there are many varieties that would be great. Walden Farms no sugar added blueberry syrup is very tasty!
A dollop of whipped cream is also a delightful way to crown this breakfast casserole.
Create a breakfast buffet bar with assorted types of syrup and toppings such as flaked coconut, chopped pecans, crumbled bacon, dried or fresh banana slices, peanut butter or powdered sugar.

Blueberry French Toast Bake
Equipment
- 1 9 x 13" baking pan
Ingredients
- 1 loaf thick sliced bread , such as Texas Toast, 675 gram size
- 9 eggs
- ½ cup brown sugar
- 2 cups milk
- ½ cup heavy cream
- ½ teaspoon cinnamon
- 1 Tablespoon vanilla extract
- 1 cup frozen blueberries or fresh
- ¼ package cream cheese
Topping
- ⅓ cup brown sugar
- ⅓ cup flour
- ½ teaspoon cinnamon
- ¼ cup butter
Instructions
- Preheat oven to 350˚F. Grease a 9x13" baking pan (Or line with foil and spray with cooking spray)
The Casserole
- Cut bread into 1 inch cubes, place in a bowl.
- Whisk eggs, add milk, cream, cinnamon, brown sugar and vanilla. Pour over bread and toss to coat.
- Pour bread mixture into prepared pan. Sprinkle blueberries over top.
- Cut cold cream cheese into small cubes, and spread evenly over top.
Topping
- Mix together brown sugar, flour and cinnamon. Cut cold butter into mixture with 2 knives, a pastry blender, or just using your fingers, until completely blended.
- Sprinkle evenly over top of casserole.
Baking Instructions
- Cover with foil and bake for 30 minutes. Remove foil and bake for 20-30 more minutes, or until a thermometer inserted reaches 160˚F.
- Remove and allow to sit 10 minutes before serving.
To Serve
- Serve with maple syrup, blueberry syrup, whipped cream or assorted berries.
