Candy Glass

Candy Glass is a super interesting and fun way to decorate cupcakes or cakes.

Using 4 simple ingredients including sugar, corn syrup, water, and some cream of tartar, this creative decoration can become a reality in your kitchen.

I love how sugar glass actually looks like shards of glass! It becomes such a conversation piece when people see it, they are so impressed by how real it looks!

A Fun Decoration!

  • I am always looking for fun and different ways to decorate. I love to work with fresh flowers – it’s likely my favorite decoration. But this candy glass, or sugar glass, is a close second.
  • This recipe is versatile – there are so many ways to utilize it as a decoration and for so many occasions.
  • Candy sugar glass is great because you can prep it ahead of time! Leave yourself a bit of time because the glass candy needs to become hard before you can break it. So prepare it the day ahead and just keep it in the refrigerator until ready to use.

How to Make Candy Glass

Learning how to make candy glass could not be easier! Keep in mind however, you need to practice extreme caution! Any candy must be brought to a very high temperature, so the risk of burning yourself is a real one. So again I tell you, be careful!

  1. Prepare all your ingredients and the baking sheet you choose to use.
  2. In a saucepan, bring all the ingredients to a boil. Lower the temperature and continue to cook until it reaches a temperature of 275˚F.
  3. I highly recommend using a candy thermometer to safely check the temperature of your candy. If you do not have one, get one! They really are not that expensive.
  4. In the end, if you do not have one, cook the candy at a slow boil for at least 10 minutes .
  5. Carefully pour the liquid candy onto a baking sheet. There is no need for lining it with parchment. As it cools, it will break away from the pan easily. And for clean up, simply pour hot water and soak the pan. It is basically sugar after all, so it will dissolve.
  6. Allow to cool completely. This will take a few hours or overnight.
  7. Using a blunt tool, hit the candy and break into shards. You will break into sizes you feel you need.

Can I Color The Glass Candy?

Yes, simply add the desired color into the mixture before you begin to cook it. You can create any color you like.

Another idea, once the candy has been poured onto the baking sheet, work quickly and drop your choice of food coloring liquid onto the candy then swirl with a toothpick for a unique look.

Below is an example of a cake I took to a friend’s Halloween party. I hope this gives you an idea of the different color possibilities. In this case, I used dark corn syrup so the glass was a deeper yellow. If you use the light corn syrup, you really can tint it any color you choose.

This was such a fun cake to make! The glass was placed so randomly and I loved to splatter the “fake blood” on the cake and the candy glass!

A Great Idea!

Edible fake blood is so simple to make! Red food coloring, corn syrup, a touch of cocoa (or chocolate syrup or blue food coloring) and a little water thin it to the consistency you need.

Is Candy Glass edible?

Yes, this is totally edible. But it is pure sugar, so I don’t recommend eating too much. My son’s friends were over when I made it and I found them sneaking pieces all the time, they loved it!

I used Candy Glass to top my cupcakes in the photo below. This is a perfect winter themed dessert!

Candy Glass

Candy Glass, or sugar glass, is an interesting and fun way to decorate cupcakes or cakes. I just love how it actually looks like real shards of glass! 

Equipment

  • saucepan
  • candy thermometer
  • baking sheet

Ingredients
  

  • 2 cup sugar
  • ¾ cup water
  • cup light corn syrup
  • teaspoon cream of tartar

Instructions
 

  • Mix all ingredients together in a saucepan.
  • Bring the mixture to a boil, stirring with a heat safe utensil.
  • Boil continually to a temperature of about 275˚F. Using a candy thermometer to check the temperature is the best way to do this.
  • Being extremely careful, pour onto a large baking or cookie sheet.
  • Allow to cool completely, then break into pieces.
  • You can store the candy glass, layered between parchment or wax paper, in a container in your refrigerator for about 2 weeks.

      I have not tried to shape it myself, so I could not say. Always exercise extreme caution when working with this recipe.

    1. If you do not have a candy thermometer, bring it to a boil then lower the temp to med-low and boil for 10-12 minutes.
      Always use caution for this recipe.
