What Is In This Confetti Bar Recipe?
The beauty of this recipe is it’s simplicity! Only 4 ingredients, that you likely already have on hand, is all you need to create this velvety smooth sensation!
- peanut butter
- butter (or margarine)
- butterscotch chips
- mini marshmallows
How Do You Make It?
It’s super simple! You can choose to make this on the stove top or the microwave, either way works great!
- Prepare an 8×8 inch pan with parchment paper.
- Prepare the bars using one of the methods below.
- Once done, press into prepared pan
- Refrigerate for at least 1 hour before cutting into squares.
- In the microwave:
- Use half power for 30 second increments for this recipe.
- Melt butter and peanut together in a microwave safe bowl and stir.
- Add butterscotch chips. If they are not completely melted after stirring, continue to microwave again until just melted.
- Allow to cool 5 minutes. Then stir in marshmallows until coated evenly.
- On the stove top:
- Over medium low heat, melt butter, peanut butter and butterscotch chips until just melted.
- Remove from heat and allow to cool 10 minutes.
- Add marshmallows and stir until coated.
- In the microwave:
How Do You Store Confetti Bars?
You can store these bars at room temperature, however I love to eat them cool from the refrigerator! It’s like eating a cool ice cream bar. They will last in your fridge for about a week if not longer.
You can also freeze these delicious morsels! They are perfect to keep in the freezer for times when unexpected guests pop in, or you need a quick after school snack for the kids.
They are also delicious with an afternoon coffee or tea!

Ingredients
- ¼ cup butter or margarine
- ½ cup peanut butter
- 1 cup butterscotch chips
- 1 bag colored mini marshmallows 250 g size
Instructions
- Line an 8x8 inch pan with parchment paper
- Melt butter and peanut butter in a microwave safe bowl and stir to combine.
- Add butterscotch chips. Microwave on half power for 30 second intervals until chips are just melted. Allow to cool for 5 minutes.
- Once bowl is cool to the touch, stir in marshmallows.
- Press into prepared pan and refrigerate.
